    With NFL training camps opening this week, it was time for me to get back into the game day groove, and warm up with some wings .

    On the 26 Kettle with the Vortex, which btw, the Vortex is not a high heat device, its as the literal definition of the word vortex, its about a lot of convection ................. used Kosmos Blackened Cajun Spice seasoning. The poppers were filled with pulled pork.

    Side pork. This is new to me.
    i was given some pork packages by my brother up north MN , and two of the packages were listed as β€œside pork” but of course I didn’t think anything about it. Thawed everything out in a mix of water, some kosher salt, and brown sugar (a lite brine). After 4 hours in the fridge, I took it out and noticed that two of the packages were thick sliced. Checked the package labels and they said side pork on two of the packs. Grilled everything on the pk360 like I would do any pork, and went a bit charred on the slices. All in all, turned out very good and no where’s near as salty as bacon.

      It's peak of tomato season so we grilled swordfish and served with tomato jam and a pesto tomato salad.

            surfdog I made the recipe to the letter, using beef broth & pulled pork as the protein. The pork isn't added until the very end, when the beans are done. I cut the pork up into small, somewhat uniform pieces, stirred it in & set the cooker on warm while the ribs rested. Next time, I'll add a little diced adobo chili with sauce to it..probably just 1 Tbsp, instead of the 2 stated in the recipe because the jalapeno gave it a pleasant heat without overwhelming the dish...

          Peanut Butter Fudge.....cooling.

            Tomato sauce. I got about 30 lbs of blemished tomatoes at a substantial discount at the farmers market yesterday. I trimmed the scars and soft spots off and after pureeing and cooking down I got 6 quarts. Add this to the three quarts I made a month or so ago and I'm good for the year.
