Looks great, an extra compliment goes to your choice of briquettes.

Thanks Guys!! Regarding the briquettes, I started using B&B after they had the B stamped into them, so I never got the brittle ones. From the standpoint of cook time, consistency and being able to run a clean fire, I really like B&B charcoal.

ID:	1885413 We were at our son’s house for my wife’s birthday today. He made an American Waygu brisket from SRF. About ten hours on his OKJ Bronco followed by about three hours resting in a cooler. He put it on at 4:00 AM this morning.

It was perfect. Tender, juicy, and full of flavor. Yum. He has a knack.

Family friends visiting my parents and they requested ribs. Made a bourbon honey glaze to finish them

Four Roses, If you get a chance to visit the Four Roses distillery--Just do it.
Four Roses paired with Ribs. 🙌👍

Haven’t had a NY strip in months, got me a 1 1/2” Prime strip from HEB. Flipped over some hickory on the SNS. Ain’t never done shiitake mushrooms with a steak so I tried em out tonight….oh yeah! Sautéed em in butter with a little garlic salt and pepper, much better than my usual white mushrooms. Baked tater for the side.

I like to dress up a little when I hit HEB on the weekends.

Love a chuck steak. We used to do them all the time. A nice flavor to them

Shrimp Ceviche! Argentinian Pink Shrimp, shallot, lime, tomato, cucumber, avocado, cilantro, lemon drop peppers.

lemon drop peppers from CSA. Nice little spicy pepper; the aroma is citrusy and a hint of pineapple. Think Peruvian cuisine! Aji Amarillo.

Ceviche is one of my favorite dishes. Have actually made it with crappie, red onions, thin sliced Serrano peppers, and fresh lemons on the boat in a red solo cup before!!!

Not really cooking, but this was my latest creation.

Click image for larger version Name:	image.png Views:	0 Size:	6.28 MB ID:	1885523

I think I started with... 22lbs or so of pork belly, after curing, smoking, then drying in the fridge for a few days, ended up with a hair under 19lbs.

When I went to put it in the freezer, I realized I still have about that much in there from the last batch - we haven't been cooking much bacon the last couple months. Sooooo... some friends, neighbors and coworkers might end up with some. I've got a small catering cook this coming weekend, I might slip them a pack of bacon in as a bonus surprise. lol

I like the way you roll. Good looking portion control there. Everyone gets their own bag.

Made one of our favorite dinners last night. SRF Wagyu ribeye steaks, SV'd at 131* for 1.5 hours, let cool, then reverse sear on the SnS. Roasted/air fried potatoes and fresh broccoli. And wine, of course!

Beautiful cook meat to balance broccoli and brussels sprouts
      Good you done did.

Breaking in the new 3 Nail skillet. I seasoned it twice and then cooked a pound of bacon (in two batches) yesterday. Today I made hash browns in the bacon grease. It is truly non-stick and actually better than my seasoned cast iron skillets for hash browns. No final picture but I got the hash browns a good dark brown in color before plating.

The hash brown recipe is from an old Southern Living cookbook that my parents had, not sure where it is now. It calls for a batter of flour, milk, and S&P. The recipe calls for par-cooked diced potatoes but I started to julienne them with my cheese grater to skip that step. Same with the onions. I added hot Hatch chilies to this batch, no green chile flavor but the heat was there.

I think this is the first post I've seen on AR with someone using a ranch kettle. Nice work sir, those look beautiful.

Chuck roast on the Hasty Bake 357 Pro rotisserie. Soon to go into the braise, then fire-roast the veggies/fruit for salsa. Tacos tonight!

My grandparents had a bait shop in far northern Wisconsin when I was a kid. My siblings and I spent whole summers there. Perch and bluegill by the cooler full every day. Pan fried and delicious for nearly every meal. I still love it.

All these gorgeous steaks lately made me crave a little steak. Wagyu ribeye, reverse sear with a smidge of hickory. Mushroom caps. Arugula dressed with olive oil and balsamic. Baker (dressed at the table).

Decided to try a tri-tip brisket style. Everyone enjoyed it, I'll do it this way from time to time, just for some variety. 275 for about 4 hours to 203 IT on a pellet smoker, then a quick sear over charcoal. I didn't keep track of the exact time, my bad.
