    I am having an organic apple Meade that I make myself. It is Gluten Free and smooth

    It’s easy,

    6 gallons organic pasteurized apple juice
    3 lbs organic turbinado sugar
    3 lbs organic raw honey
    1 teaspoon Nottingham yeast

    sanitize everything
    dissolve the sugar into the apple juice
    do not heat the honey

    put all into fermenter, let it sit, should start bubbling in 24 hours. When the bubbles slow down, around 3-4 weeks, I put it into the kegerator and enjoy.

    the longer it sits, the better it gets. You could let it sit for several months, some tell me a couple of years.

    the nice thing about this, you can change everything about it. Change the yeast, the sugar, amount of honey, type of honey, length of time, it’s all good. You could hop it, add fruit, anything, if you choose.

    if you add anything that is not pasteurized, you will have to do that without boiling the juice. Can’t heat the honey over 120.

    I don’t have bottles so I can’t tell you how it will do or how much pressure it will build.

        And yeah, that’s Maldon Chili Sea Salt on the rim. Not for the timid…it packs a fair punch. But it is tasty.

          My Wegman’s was closing these out (several different flavors, not this one) at $2.22 each so I bought a dozen of them. I can’t drink regular tea, this stuff is delicious though.

            I drink rooibos tea all the time. I really like it. That Gingerbread-flavored rooibos tea actually sounds pretty good. I'd be tempted to morph it into a chai.

          For all of you that want to make your own hard cider/Meade etc….

          Like my smoking, woodworking, brewing, I have a substantial investment in all of these rabbit holes.

          The other thing, like smoking meats, once you start making good brew, everyone will want to enjoy it. 5+ gallons will not last long.

            I used to buy rooibos in bulk, and steep it using a basket, but for some reason I stopped and now I can't find it locally.

              I’m sure I’ll be switching it up later though…
              Haven’t done a “whisky sour hour” for quite some time. And there’s also some rum calling my name. ;-)

                SheilaAnn Burritos actually. LOL I have some smoked pork that we need to make go away, and some chicken that didn’t get sacrificed to the stock that I made yesterday.
                But tacos could just as easily be added to the “menu.”

                Fine choice.

                Ya know…I’ve not had one of those in what seems like forever. I will remedy that once I get back home.

              Bought this over a year ago and completely forgot I had it. I’m on a Jesuit retreat this weekend so I brought it. While I’m not a huge stout guy I do enjoy this.
