    This is a mix of leftovers and breakfast, but since it started as leftovers from a restaurant and ended as breakfast…. Breakfast FTW!

    before is quesobirria tacos (it’s a thing here now, lots of melty cheese, beef birria, onion and cilantro) consommé for dipping.

    I took the consommé and put it in a sauté pan, gently opened the taco and put a lid on the pan to “steam”, topped with a fried egg (duck in this case because my neighbors girls were very generous), pico and more cilantro. Sour cream and avocado slices on the side.

      Something about a breakfast that gets all in your beard and all over your shirt that just starts the day off right

    Diner style breakfast today…hot cakes, potato O’Brien, scrambled eggs and bacon from the belly I cured…which I realize I didn’t get a pic of!!! I love this dang griddle!

      The breakfast so nice, I made it twice!

      King’s Ristorante serves up a cold appetizer that is roasted red peppers, parsley, raw garlic, and lemon juice. It kicks. Seriously. The raw garlic is moderated a bit by the parsley, but just a little; there’s some allium action going on here!

      That bread they serve at King’s is made from pizza dough, and it is fantastic! I melted some mozzarella on top, and hit it with some mild hot sauce.

ID:	1652484 Today the mozzarella went inside, and I made a nicer presentation with grated Parmesan, cracked black pepper, and a couple basil leaves.

      Raw garlic in an dish isn’t an every day thing, but every now and then it’s really delightful! There has to be some other strong stuff going on: the parsley, the lemon juice, the red pepper all work alongside the garlic to wake you up in the morning. Eggs and mozzarella are mild and creamy enough to carry the bold flavors, so it all works well!

      I had half a strip steak left over from the other night, and some onion straws.

      I like practicing cutting steaks like this. Sharpen that knife, and sharpen those skillz! (“Chicks dig guys with skillz.” — Napoleon Dynamite)

      I wanted to heat that steak up, but I didn’t want to go past that medium rare! The onion straws aren’t going to get crisp after a couple days in the fridge, so I mixed them in with the steak, and, because this is breakfast, an egg.

      And then it’s build a breakfast taco workshop. All I have right now are these gordita style tortillas; I usually use them for quesadillas, but who cares? One gordita is about the same as two regular, probably about.

      From bottom to top: avocado paste, habanero salsa, beef egg and onion, shredded cheese, sour cream, lettuce. Or, as we say here at La Casa Mosca, breakfast.

        Clean out the freezer B&G. Homemade sausage found in the back of the freezer. As it was cooking up, I added a splash of that pepper blend I was gifted. Game changer! Found a biscuit, too! You can hardly tell, but I griddled it to “freshen” it up. Added a scrambled duck egg. Egg looks overcooked, but it was not! #foodcoma

          I love griddled biscuits. I’d much rather have that than a fresh out of the oven one. Biscuits, gravy and sausage warm an old southern mans heart.

        I really do lead a simple life, where I simply recycle food into other food. I try to be frugal with it.


        So if I take some leftover haluski (sautéed cabbage and onions mixed with noodles) and stir it up with some jalapeño cheese kielbasa,

        It looks simple (well it is). But breakfast is such a photogenic meal sometimes I have to shoot it.

        I wanted my eggs over easy, but I also need to use up some serranos. I don’t see people pouring unscrambled eggs over vegetables ever… I think that we need to start doing that.


        I chopped the peppers, sautéed them, then did the eggs over easy on top. Served with bacon and garden vegetable cream cheese on toast.
