    I guess this technically falls under "Show us your future breakfastes." :-)
    I make pork breakfast sausage about once a year.

    Today I used two pork shoulders and a standard set of spices for breakfast sausage. I packaged them in 6 one-pound batches and 16 eight-ounce packages.

    The eight-ounce packages are good for weekends when we aren't serving breakfast to anyone but ourselves, and I can usually make the 8 ounces stretch over two weekends.

    I also share these packages with family and friends.

      Yeah, I'm sorry Murdy I tried to do a web search and thought I knew where I got the recipe from, but none of the ones I look at now are identical. But they all seems to have similar ingredients.

      Thanks, mrteddyprincess , I was glad to hear it was Kosher. I'm on a salt restricted diet and don't eat breakfast meats much anymore, so I was doing the math in my head and I think this is something I could work with.

    Day off today for a late morning doctors appointment, so I had a little time to tend the garden and make some breakfast with some of the booty.
    scrambled eggs with onion, sweet / hot peppers, and a side of black cherry tomatoes.

      Put two scrambled eggs into a buttered nonstick pan, cover and cook for two minutes.

      Place your tortilla onto the almost set eggs.

      Flip over.

      I put a paper plate on top and flip onto that then slide it back into the pan.

      The eggs are actually attached to the tortilla so you don’t have to worry about them sliding out.

      More breakfast tacos. Toasted flour tortillas with scrambled eggs with Tajín, the last of my fire-roasted hatch chiles (cry), Mexican cheese, and delicious, exquisite pickled red onions.

      I have tried so many pickled red onion recipes and finally found one I liked from Rick Bayless: slice up a large red onion, mix it with a teaspoon of salt, and cover overnight in nothing but a cup of fresh lime juice (enough to cover the onion when packed down). No vinegar, no sugar....it's perfect, absolutely perfect.

      (Those are onions I made on August 6 and they are still crunchy!)

      ssandy_561 I did it on the griddle. Tomatoes, onions, Hatch chiles, and bacon, and of course cheese. The flip was a lot easier than I thought it would be, I used a spatula with a hand on top of the tortilla and moved fast. This also changes the texture of the tortilla, giving it a nice light crisp while still staying soft.         Thanks. I've not done well with tomatoes this year. Not sure why. I'm not getting many other than the cherries. The heirlooms like this one, that I have been getting, have been delicious.

        Finster we have a friend who is a farmer and drops off two dozen eggs every week and I trade them my sourdough pizza kits in barter. It’s a win for sure on our end!

          Ok….so I didn’t cook anything for this - my wife made the pancake earlier this week…but this is breakfast and I love it! Chocolate pancake, yogurt, granola, honey and peaches of course!
