    We did a Quiche here, kind of a tradition. It had Swiss cheese, onions and crumbled bacon.

            A meal for a king!

          A refried bean omelet. Ghost pepper Colby Jack cheese, refrieds with a little Tajín mixed in, raw onion, salsa on top. This was a pretty damn decent use of leftover beans and chopped onions.

          It looks like I’m going to be doing omelets for a while. That’s just how I wake up feeling, I don’t try to control it.

          This was really good, a lot better than I was expecting. Leftover mashed potato & tomato omelet with ghost pepper cheese. I’ve been working on a hybrid classic and country omelet, using the classic technique until half done, then finishing it under the broiler. That gives me a nice creamy pale yellow omelet that has enough structure to hold an American amount of filling. 2 eggs. I did the potatoes until they started getting crispy, then mixed in the tomatoes to warm them up.

            While picking up my weekly bacon ration yesterday at the butcher, I noticed he had some beef bacon..
            having never tried it, I had him add a few slices to my order.
            cooked a couple of slices up to go with my omelet and toast. I have to say, it was better than I was expecting...

              At my old job, we did beef bacon every now and again. It seems like it fell into the “love it or hate it” realm. Give me good ole pork bacon anytime!

              It was good, and I would, and probably will, eat it again.
              But, it will NEVER replace good old fashioned bacon.
              Bacon is after all, what they use to make other foods better
