    The Cinco de Mayo breakfast burrito! This was an excellent breakfast burrito. However, I really like 58limited’s suggestion to make several smaller tacos. And those will be breakfasts all this week, until I get tired of them probably around Thursday.

      STEbbq Absolutely, but it couldn’t go inside before grilling, so it was either on, or on the side. On the side let me scoop it onto each bite, using a fork!

      hoovarmin - that was one of the things I liked compared to older models, pushing to the back middle rather than a drip edge like they use to come with. How is your CC set up? Is it up on the front or corner?

      barelfly there is a trough on the front that angles down to a hole in the corner.

    Lots of tacos for the next week.

    Simple one today: eggs with chorizo. Melting the cheese on the corn tortilla under the broiler also softens the tortilla. Topped with a nice traditional salsa.

      A Friend gave us some Asparagus and Fresh Eggs so a frittata was the result. Added some onion, red pepper, and feta. It was good.

        Bacon, egg, cheese, and serrano quesadilla. Different from a taco because the wheat tortilla crisps up, I guess? Idk. It was fun, and good, and different. Red and green salsas, sour cream (I’m out of crema).

              Love duck eggs! I just finished my last two the other day.

            A hunk of beef that was tagged as expensive but was marked down and they sent a mark right through the name of the gall darned thing. Read can……. Sure was good! I mean wow good! Scrambled eggs, garlic, chives, onion bits, a little New Mexico Chili Powder and maybe a tad too much of white cheddar which made it just a little on the goopy side. But hey, we all need a little goopiness now ‘n then. Click image for larger version

              1) Beef for breakfast is severely underrated. 2) Regarding the cheese, remember this mantra: “More is better, and too much is just right.” This is especially true for cheese.

            Finally I get another chance to take breakfast outside. Today we have hash browns with peppers and onions and a shake of SPG, and some nice lacy eggs.

              Yeah, I seen ‘at! Surprised, but y’know it IS the most important meal of the day they say!

            A bacon egg and cheese burrito. This is about as fancy as I get for breakfast. Any fancier and it will be breakfast for supper.

            This is just an omelette wrapped in a wheat tortilla. It's less messy than using scrambled eggs.

              barelfly We took forever to do pancakes on the griddle. It was the one holdout that we still did in the kitchen…until recently. Like everything else, pancakes are so easy and fast! Just be sure the griddle is clean first.

            This bag of Doritos has an expiration date of today. There is only a single solution.

              Mary Joan got 2/$1 and then never ate one of them. I didn’t want to touch it because you know what would happen the next morning as she was getting her lunch for the day: “Where’s that bag of Doritos that was on the table? I was going to take that for my lunch today!” I waited until its last day.
