    Good Morning and Happy Mother’s Day!

    Sunday Breakfast:

    Breakfast Burritos with black beans, Hatch diced chilis (from can), homemade chorizo, diced breakfast potatoes and cheddar cheese. Runny egg on top.

    The egg was seasoned in the pan but the yolk broke on the flip so I slid it out right away.

      Working a little on my presentation skillz this morning. Avocado omelet with reverse salsa fresca (I learned you can’t abbreviate it to just pico), cotija cheese, and Texas Dave’s (58limited’s) Fiery Pepper Powder, which goes on almost everything these days.


      I am still puzzled at how I made it this far without realizing you don’t have to scoop avocados. You can just peel them for a better appearance.

      Then topped with the salsa fresca, crumbled cotija, and pepper powder. The tortillas look like big ol’ Tostitos there!

      I’m pleased with this. It’s a little busy looking, but I think riotous colors suit the type of cuisine. And it was really delicious.

          I’d eat that! Griddled biscuits? I keep leftover biscuits in the fridge. At breakfast I slice 1 or 2 in half and butter the inside of the halves. Then I brown them on my CI tortilla skillet. Is that what you are talking about? I love them. I call them biscuits refritos.

          Oak Smoke exactly! Butter, residual bacon fat, whatever is at hand. If they are straight out of the fridge, I have covered for a minute or two to steam them, then press a tiny bit to develop a little crust (like when French toast get browned).

        Why WOULDN’T you make a sausage and egg mcmuffin with chorizo, if you had chorizo with which to make a sausage and egg mcmuffin?


        A tip for when you know you’re going to be putting salsa on a sandwich or burger: let it sit in a strainer, or on a paper towel, for about 5 minutes. All the water will drain out.

        (While hash browns and salsa are not part of a classic Sausage and Egg McMuffin, I always get the value meal and put the hash browns on the sandwich. I get a salsa packet to garnish. And anyhow this is the noncapitalized version.)

        I use these egg things to keep stuff round. They’re for non-stick griddles, but it’s still cold and overcast and I don’t feel like going outside and screwing around with the griddle in the cold.

        That egg has to be a hard yolk, or at least jellied, to get a decent flip and still make a sandwich. Because it’s off center, I also could have poked it and flipped it runny, but I didn’t.

        10/10. Delicious. Would make again, but on the griddle so I don’t have to clean up two cast iron skillets.

            Some huevos rancheros tostadas.

            I hate it when the yolk breaks coming out of the shell. But there’s no way I’m tossing that egg. Those are refried black beans.

              I’d say great presentation! Nice representation of colors on them there yummy tostadas!!!

              (You will soon learn of my disdain for ketchup… it’s a running joke, friend!)

            So after a long night on a first day back to work with a 2am crash time I was craving crunchy potatoes or tacos.

            This morning potatoes won out and I made this hot mess of a plate with leftovers. But darn this was delicious and Jessica agreed.

            So this is crunchy taters, leftover ground beef with olive and mushroom, leftover grilled red onion with green onion whites. On the plate fantastic hatch fire roasted green chili, crema, green onion and two poached Vital Farms eggs.

            we are going for a walk shortly so no cheese or tortillas…sigh.

            Not much to look at but my oh my!!

              barelfly Never heard of them or seen them here. I was placing an order from Walmart and needed poblano chilies. So I just typed in Chili and that populated so I thought let’s give it a shot after reading the ingredients. Bought two bottles. So delicious.

              I have my frozen fresh green chile, but for the quick and easy when I need a spoonful or two, 505 is what I have on hand, always. Costco sells it here locally, so I have a big ol jar of it in the fridge at all times.

              Glad you were able to find it! It is one of the better jarred green chiles available!

              Also - if you happen to find Sadie’s Green Chile Salsa…omg that’s my favorite store bought salsa! Also local!!

            Potatoe, potatoh, tomatoe, tomatoh, so what. Who cares. Well maybe if you’re making mashed, or a bacon lettuce thing.

            This was going to be a Spanish omelet, but I didn’t want to make that much food, I would have needed 4 eggs and twice as much leftover potato to fill the pan. So I made a classic omelet and filled it with leftover scalloped potatoes.

            It was nice to have a chive flower. I’ve been working on my presentations, and was undecided between chives and a basil top, but when I saw the chive flower I wanted that. Usually I just pick them, wash them, and eat them.
