    Nothing I don’t do every day. But this ham is pretty good. It’s from Wegman’s (like H-E-B, but Mid Atlantic states), called “Celebration Ham”.

    And this cheese is interesting. It’s called 4 Pepper Cheddar. Instead of the peppers being incorporated into the curd, it looks like they cut the cheese into bricks, then rolled it in the pepper mix before packaging.

    I don’t know much about cheese making. But I’ve eaten a lot of pepper cheeses, and the cheese itself is usually pretty young. This cheddar is mature, with a nice bite.

    All this goes with some artichoke hearts (from a can, sorry, I haven’t steamed an artichoke in decades) to make a nice quick omelet.

    McMuffin camp food! Muffin in the oven, egg in the microwave, add precooked bacon and some cheddar cheese, back in the microwave, slap it on the muffin and enjoy! Click image for larger version

    Griddle breakfast this morning after my ride. And…I do not like syrup touching anything else but the pancakes…thus the stacked plates 😂

    A mix-in omelet with velvet foot mushrooms, cheese, and onion. Sourdough toast and jalapeño cream cheese, red habanero salsa.

    I made both red habanero salsa and orange habanero salsa. The orange is much hotter, but I think I actually like the flavor of the red (which is nevertheless pretty freakin hot) better. ETA: Interestingly, the internet says that orange habs are hotter. My red habs could be red savinas.

      Breakfast today starts with a layer of fresh spinach, fresh mushrooms and bacon bits sautéed in EVOO. When cooked I added the egg mixture (whipped into submission to add as much air as possible) which consists of eggs, half and half cream, sour cream, salt, pepper and Mexican oregano. Then reduced heat and covered until eggs fluffed and firmed up. Added cheddar jack cheese until melted. Cut into quarters. Plated with sourdough toast with whipped cream cheese for me and strawberry preserves for Mama Ace.

        That is an excellent way to start the day.

      Avocado and Jarlsberg omelet, with the rest of the avocado on the side. Smoked Hatch pepper salt, and fresh black pepper.

        Jfrosty27 I gotta figure out a way to use that torch on eggs. I’m thinking of standing it up, then scrambling eggs and pushing them through a strainer in front of it, where they’ll cook as they pass in front, then drop on to a plate in long strands. It probably won’t work, though. I think the force of the blast from the torch will blow them out of control.

      Yesterday’s bounty included Hatch peppers from Wegman’s, kielbasa from Glen Lyon Brothers at the Plymouth Kielbasa Festival, and potato pancakes from St Jude’s Church Picnic. Does that sound like breakfast to everyone, or is it just me?

            Been doing a fair amount of fasting this year. Mornings after a fast day I try to eat fermented food and avocado (good fats) first. My theory is that it super charges gut health. 🤷‍♂️. Anyway here’s my “Break Fast of Champions”

                  Ham and cheese omelette topped with Chimayo red chile sauce. I added a diced Zapotec jalapeno from my garden to the eggs for a little extra kick. This is one of the best omelettes that I have ever had.
