Breakfast quesadilla from Bread & Butter quick cafe at Borgata Casino in AC. B&B is a superior quick eats spot. The menu doesn't look like much, but the quality is excellent and portions are huge. Anything you order will satisfy you beyond expectations.

I always forget about posting here. And I made a good one today too. I had some leftover sautéed jumbo shrimp from a couple nights ago that needed to be used up. I had spiced them with a sweet honey bbq rub I have too much of. Anyway, I diced them up and made an omelette. I added some smoked white cheddar with bacon cheese. Anyway it was really good.

It’s long gone in terms of pics. Maybe I’ll remember next time. 🤷‍♂️

It sounds like it was really great, though!

I like a corned beef sandwich as much as the next person, but this is the real reason I make corned beef.

I made this delicious Omelette this morning. I was filled with veggies and Mexican spices. Complete with a side O beans and a Low Carb Tortilla.

Sid P I use Mission and La Banderita brands. I get the whole wheat ones when they have them.

        Thanks.

This morning was local bacon, fried corn bread with maple syrup, blackberries, an egg and coffee. One of my favorite ways of eating corn bread.

        Finster,
Most of the time I butter the corn bread as you would a grilled cheese. Today I used some of the bacon grease.

These were really excellent. Scrambled eggs on wheat tortillas, frico’d cheese and fresh pico de gallo with avocado. (It’s not guacamole because it’s only about 1/3 avocado.)

Breakfast and leftovers crossovers. Pastrami and eggs on rye toast.

Dried beef gravy, eggs scramble with pepper jack cheese, fried potatoes seasoned with POG, and fresh blackberries 😋

We are a big fan of dried beef gravy in this house!

Our second cheap casino gift arrived: a stand alone steamer. This will be interesting. Usually I microwave anything that would normally be steamed, because I don’t like cleaning another pot and steaming basket, and also because it’s a work flow that I’m used to. But steamed vegetables definitely taste better than microwaved vegetables. And this frees up a burner on the stove, and I don’t have to clean around it, and I can toss the basket in the dishwasher.

I looked it up, they cost $20.

Anyhow. Because I do breakfast, I decided to do the eggs in poblano pepper thing, in the steamer.

While that stuff was steaming, I chopped up some salsa fresca stuff. Garlic, serrano, habanero, white onion, tomato, cilantro.

Purc SheilaAnn the last couple San Marcos trips, I got breakfast tacos at Loli’s Cafe. That’s drive up only, bring the food back to the hotel. But they were damn good breakfast tacos!

In October 2024 I got there a day early and ate dinner at Toma Taco. It was absolutely outstanding. But I didn’t have breakfast there. Reviews say it’s a damn good breakfast, though.

These always have a redux, because there’s always leftover salsa and avocado, and I’m always trying to think of ways to make it better but without going overboard. Diced ham makes this better.

I had a baloney sandwich for breakfast. With Swiss cheese, cole slaw(on the sandwich), and yellow mustard. No. I didn’t take pictures. Why bother? Hey. It filled the hole. 😳🤣🤦‍♂️

It was hearty for sure, Mosca ! No need for dinner tonight, maybe the last few potatoes that were left over. And this was for my better half and I - no way I ate that all myself!

Made a batch of salsa yesterday so today is eggs poached in salsa on toast with a couple of sausage and quesadilla yoke dipping triangles. I’ve posted similar before:
