We had breakfast tacos yesterday at camp. Forgot the eggs at home so they were eggless.
Homemade breakfast sausage, potatoes, refried black beans, shredded cheese and salsa. Now that I think about it, not sure if there was room for eggs 🙂

I had a couple habaneros that were dead-green, and weren’t going to ripen before the weather turned completely. I’ve never used green habs before, but folks say they’re good; different, but good.
They're fine. They aren’t very hot, but people who don’t like heat will think they are. They have that distinct habanero taste, but it’s less fruity and more vegetable. There’s a temptation to compare them to serranos and jalapeños, but they don’t taste the same, other than the green-ness. These taste exactly like what they are: immature habaneros.
I still like the ripe ones better. And for green hot peppers, I still prefer serranos over anything else. But these were still pretty good.

Bacon, Bacon, and toast.
I had pork loin curing for AR Canadian Bacon. That finished on Sunday. I desalinated Sunday evening and rested overnight.
I also had AR Maple Bacon that finished on Monday morning so Monday was PBC day for bacon.
I vac packed the individual pieces whole and held them in the fridge due to my schedule this week.
Today’s breakfast was bacon, bacon and toast. I’ve made Canadian Bacon multiple times but this was the first time for streaky bacon. It was very good and I will make it again in the future.

I love pancakes! Those look delicious and the recipe sounds great! Unfortunately I’m too lazy to make them. So I go out for them. BUT, they have always been expensive but a few days ago I went to my usual spot and was outraged. $11 for two 7-8” cakes. I couldn’t believe it. 1. I won’t be going there anymore. 2. Time to get over my lazy streak. 🤷♂️🙄

Breakfast Smash Taco!
I made a small ball out of my homemade breakfast sausage. I cooked a raw HEB flour tortilla on one side, flipped to par cook the other side. Placed the sausage ball onto the griddle, covered with a tortilla - cooked side down - on top of the sausage ball and smashed it as flat as I could get it. When the sausage had a good char I flipped to finish cooking both the tortilla and the sausage.
I made some green chile crema scrambled eggs for this, topped with white and cheddar cheeses, and some of my Hatch hot sauce. Oh boy, was this good!

It’s 7AM Oct 31, and these last two ghost peppers aren’t going to ripen, I don’t think.
So they are going to become ghost pepper pico de gallo.
On a cheese omelet, with a quick cheese sauce to make a mock nacho cheese, and H-E-B tortillas! (Suitcased in and held frozen, from last April. Still excellent.)

Breakfast about as local as you can get.
Eggs and onions from my farm. Sourdough toast from Mrs. CN's kitchen, made with flour from Montana. Sausage from Sonnenberg's Market in Spokane. Eggs spiced with 'Thunder Fuzz Psychedelic Seasoning' from my new favourite spice shop Chef Heart in Okanogan, WA. I just discovered it yesterday, but have already cooked with it twice and am planning on going back for more.
