    Sheet Pan Pancakes

    Used Hungry Jack Complete Light n Fluffy pancake mix.

    3 cups of pancake mix
    2 1/4 cups water
    2 bananas
    1/2 cup chopped walnuts
    Sprinkle of Brown sugar on the bananas

    Pre-heat oven to 425°
    Heavily butter sheet pan
    Bake for 15 to 18 minutes

    So easy, so quick, so delicious.

    Not sure if I’m ever going to make pancakes the regular way again.

    The recipe I saw made the pancake batter from scratch and used blueberries and strawberries but bananas and walnuts sounded better to me.

      That is a .great idea.

    I stopped by Chef Heart on Friday and picked up a couple more spice blends. I used 'Woodland Broth' to season my eggs on Saturday morning. Earthy and pleasant.

      Breakfast for dinner last night. An omelet filled with beef, onion, pepper, and cheese. Served with homemade cranberry/wild rice toast and grapes. An omelet always hits the spot and always fun to make.

          I posted this in SUWYC but wanted to get it in here too so I can be part of the fun. Chliaquiles Verde with some pinto beans I made the night before. There's some grated Manchego covered up by the eggs that gave it a nice boost. I forgot to put crema on it. This is my new favorite for breakfast.

          Leftover pot roast from Monday - shredded.
          Leftover fries from last night.
          Gravy leftover from…ummm, I’m not really sure, so it’s probably getting close the the “time to toss” age.
          Eggs.

          Beef and fries went in the skillet together. Heated, tossed, then added some of the gravy to keep things moist and some red pepper flakes to make it interesting.

          Once the beef was ready I moved it to the side to keep warm while I scrambled a couple eggs.

          Simple. Fast. Delicious.

          So I snagged a piece of the andouille because, why not? And this morning I made a Cajun omelet. I didn’t make a gumbo omelet because I’m not going to spend half an hour at 6:30AM making a dark roux, then drive to the store for okra and filé powder. It’s freakin’ breakfast, just make it taste good.


          Heaven Made Amazin’ Cajun, the trinity (oh sh*t I forgot the onion), a couple eggs, a piece of andouille, and some hot sauce. I used that tomato butt, too, even though that’s technically Creole rather than Cajun. Creole gumbo has tomatoes and seafood, Cajun gumbo has no tomatoes and chicken. My guess is that in practice the lines get pretty blurry.

            I’ve been trying off and on to incorporate leftover mashed potatoes into eggs or an omelet, but they just don’t behave like hash browns, which give the browned flavor and crispy texture that I want. It just seems like a waste to not use them for something. So today I tried flattening them out, adding some texture with a fork, and browning them under the broiler.

            This took about 15 minutes, a lot longer than I thought it would! They’re still mashed, but they got some nice browning. On to the rest of it: a Genoa salami, cheese, etc omelet.

              Fresh Market sells Yukon Gold mashed potatoes that are very good, and they make great pancakes. The trick is to place the pancakes in the pan and cook on low heat until enough moisture evaporates so that they can brown. After the first side is brown, you can raise the temp to brown the other side faster - but watch 'em closely.
