I kinda wanted to make migas, but I don’t have any corn tortillas.
So I improvised. I melted some cheese, then took some Tostitos and crushed them on top. And then I inverted flour tortillas on to, to steam and warm them.
Then I flared out an avocado, did a couple fried eggs, and topped with salsa ranchera. This was pretty tasty!

Okay, here’s my first try at breakfast sausage, as part of a breakfast sandwich.
A nice fresh NY style bagel, some Irish cheddar with chilis, an egg, some salsa, some hash browns, and a lump of home made sausage.
Not bad for hand slicing that cheese, if I don’t say so myself!
I got the big ol’ 13.5” Stargazer for this one. It’s still too cold outside (25°) to griddle. The photos tell the timeline.
Then we got build-a-sandwich workshop:
This came out pretty good. It’s my first try at sausage, and it’s waaaaay over seasoned: too much garlic, and too much thyme. But it’s good enough, and better than those little cat turds from the freezer section. And the sandwich maintained its integrity throughout the meal:
