    Chila-birria-quiles I was going to put this in leftovers, but the birria is not mine. I took the leftover quesabirria taco and gently steamed to warm up and remedy the cheese. OE egg, sour cream and avocado. Leftover pico and salsa as well.

    Mixed up a quick guacamole. Made some frambled eggs (fry, then scramble before the yolk sets). Added some queso fresco for a coupla breakfast tacos.

      Yum! I've started adding Hondashi powder to my scrambled eggs for some umami and it's delicious.

    I kinda wanted to make migas, but I don’t have any corn tortillas.

    So I improvised. I melted some cheese, then took some Tostitos and crushed them on top. And then I inverted flour tortillas on to, to steam and warm them.

    Then I flared out an avocado, did a couple fried eggs, and topped with salsa ranchera. This was pretty tasty!

        Any luck fishing?

      I revisited the classique French omelette, the one where you shake the pan rapidly while simultaneously whisking the eggs vigorously. I filled it with cheddar, cherry tomatoes, and serrano peppers. This was a damn good omelet. Also: hash browns, toast, and coffee.

        Okay, here’s my first try at breakfast sausage, as part of a breakfast sandwich.

        A nice fresh NY style bagel, some Irish cheddar with chilis, an egg, some salsa, some hash browns, and a lump of home made sausage.

        Not bad for hand slicing that cheese, if I don’t say so myself!


        I got the big ol’ 13.5” Stargazer for this one. It’s still too cold outside (25°) to griddle. The photos tell the timeline.

        This came out pretty good. It’s my first try at sausage, and it’s waaaaay over seasoned: too much garlic, and too much thyme. But it’s good enough, and better than those little cat turds from the freezer section. And the sandwich maintained its integrity throughout the meal:

          Potato / salmon pancake. I make this when we have leftover mashed potatoes and salmon. Breakup the salmon and potato. Add a little egg white for glue and form into patties. Heat in a nonstick pan with a little butter. Our son loves these.

            I normally cook the salmon on the Weber kettle with a little peach for smoke. @hoovarmin

          There’s not a lot going on here really. I just want to point out that you can add blue cheese and bacon to your breakfast guacamole and it will be really good.

              Nice! I need to get more pancakes in my diet!

            I wanted omelet stuff, but I also wanted runny yolk. So I sautéed some cherry tomatoes and a cut up serrano pepper, and did the eggs on top. Some places the vegetables were underneath, other places they sat on top. I skipped the cheese in favor of that extra half slice of sourdough miche.
