    Another breakfast I usually make once a week is a vegie mix. We'll get a couple of meals with this.
    .
    Sauté up cubed potatoes, add diced onion after the taters cooked about 10 minutes. I'll add the color peppers once the onions are translucent. Add mushrooms and sausage once the peppers are getting soft. We use turkey sausage, either links, patty or crumbles. I will cook the cut-up sausage in the omelet pan a bit before adding to the veg mix. Cook everything together until most of the liquid is cooked off. In the omelet pan goes 3 Tbsp of egg whites and 1 egg. Mix together. We add a sprinkle of Meatheads poultry rub. Cook until firm enough to flip. Layer shredded cheese, spinach leaves, vegie mix and another layer of cheese. Fold over. Cook exterior to your liking and serve with choice of sides.

      Sometimes I'll make little pockets in the vegetable mix, add a splash of egg whites and an egg. I can get 5 or 6 of these depending on the pan size. Cook until done to your liking. Top with cheese.​

        Mosca , my pleasure! The basic recipe is listed in my description, but some of the details can be clarified.

        I made oatmeal stovetop like normal with rolled oats and milk. Ten minutes on low heat until the oatmeal was edible. Then I cracked two eggs into the oatmeal and stirred until I felt like the whites of the eggs had cooked. Salt and pepper. Crushed red pepper, cheese, bacon, and the hot sauce isn't in the pic. But I put Tabasco on top.

      I had a restless night Thursday into Friday (there’s a story about it), so Mrs and I went to a new breakfast place, Cactus Mexican Grill. Where I got huevos rancheros, with rice and beans. It was delicious, about as good as what I make myself!

        That’s beautiful Tom! So many people don’t realize how much flavor browning a tortilla brings. They just heat them up out of the package without creating those wonderful brown spots.

        Oak Smoke I did check, though; I always check the tortillas for those lines that show whether they are made in house or not. These tortillas are shipped in from somewhere. I’d guess Mission Foods, since they have a local bakery. They were good. But it’s like Italian places: some put a basket of bread on the table, and some put a basket of warm, freshly baked bread on the table.

        Oak Smoke - right! Last night at dinner, wife and I had pork belly tacos as an appetizer…corn tortillas were steamed to warm and fell apart a bit. They need those on the plancha for some of the brown spots and the tortilla will hold together perfectly and have that great flavor!!

        And nice breakfast!! Huevos!!!!!!!!!!!!!!!!!!

      Haven’t had chorizo and eggs in years….Flat Top King made some earlier this week, or at least saw a video of him cooking with chorizo, so yesterday when I walked by the sausage area at the grocery store I picked some up. This was a great start to the day!

      Huevos rancheros, divorceados!

      I needed these. I needed to make some homemade refritos with my leftover Rio Zape beans. I needed to make some Mexican white rice using chicken broth and onion, I needed eggs with salsa roja and salsa verde. A man can only eat so much avocado toast before he starts regretting breakfast, after all.

      I decided against using the peppers, though.

      Nice puff on these tortillas! The secret is to wet them first. Then the steam gets in there and puffs them up.

        So nice, you made it twice!

      Had a little steak and baked potato leftover from dinner last night. Potato became hash browns, sliced the steak, eggs over medium in the cast iron skillet.

      Beef bacon, over easy eggs cooked in the beef bacon grease, and a couple of slices of Italian bread also toasted in the bacon grease..

          I am so gullible. I already had breakfast this morning when I was reading the thread on weird cooking things. Microwaved eggs huh? ItsAllGoneToTheDogs So I gathered up a silicone tub, 2 eggs, didn’t have ham but did have some tri-tip 😛, some cheddar cheese, and a dab of butter. 90 sec on the eggs and another 30 sec with cheese on top. Came out pretty good! Next time I may try one egg and put between english muffins! Won’t need lunch today! 😂😎

              I give you the uwavenoobmcsammy. Cracked egg over tri-tip microwaved 60 seconds. Cheddar topped and cooked for 30 seconds then slapped on toasted 5 grain bread.
