The past weekend was the last for the Farmers Markets here in NEPA. They had some of the cutest tiny cabbages for 25¢ each, so I bought a couple, with no idea what to do with them (but because of where this is posted I bet you know what I figured out):
I needed some knife practice, so I shredded one up, along with a little onion,
and sautéed it with a couple eggs. It looks pretty disgusting actually, but it tasted pretty good!

SheilaAnn that’s pretty much it. Use a non-stick pan. No fat, the oil comes out of the cheese. Let the cheese melt and start bubbling first. I crack the eggs into a bowl and then pour them in. Then cover, and lower the heat some. The idea is the cheese has to get in between chewy and hard.
When it comes time to remove, take it off the heat for a minute or two, to let the cheese cool slightly. Then just work the spatula until the whole thing slides out.

File this under “it ain’t pretty but it doesn’t have to be”. Scrambled egg and leftover taco meat topped with white American and a healthy dose of Meatheads Controlled Burn hot sauce on wheat. Mixing leftovers with egg and cheese and putting it into a sandwich or tortilla for breakfast has to be one of my favorite ways to use leftovers.

STEbbq I got fed up with the price of store-bought avocados, and that so often they were ripe for only about 30 minutes two days after I bought them, and if I bought four in a bag to get a $1 discount, they were all ripe for the same 30 minutes.
Now I buy these sealed cups from Sam’s Club. They’re $9 for 16 cups, and each cup is 1/2 an avocado, but there is no waste and no work. If I need whole avocado, I can always get one or two.
