Back from the Meetup, and back to my routine.
A base of a toasted English muffin. Then Philadelphia Brand cream cheese (specifically named because the store brand is bullshit), bacon, eggs mixed with serranos, and topped with cheese. And salsa in one of these little storage cups graciously provided to me by Panhead John!

Years ago IHOP had a regional menu item in Texas called the machaca (and its cousin, the migas, which is the same thing, but without meat).
I realized this morning that I had everything I needed to make this. Here's how you make it. Let's build these layers of flavor.
In brisket tallow, sauté some onions. After a few minutes add some pulled pork. (I used my gochujang-marinated pulled pork. It doesn't taste asian, but is earthy and has a wonderful depth of flavor in addition to a gorgeous red color.)
Let the pork sufficiently heat through then add two beaten eggs. Sprinkle quickly with Tajín and mix.
When the eggs are just seconds from being done, add in some tortillas strips. (I used two tostadas that I quickly crushed with my hands.) Mix the tortilla strips in and place everything in a bowl.
Next, douse it with your favorite hot sauce. (I used Valentina's Hot, which I really like as it is more viscous than most commercial Mexican-style hot sauces.) Top with shredded Mexican cheese and cilantro (which I added after I took the photo).
It is so stupidly good.
That is a breakfast, my friends! 
(For the full IHOP experience, pair it with a stack of buttermilk pancakes dripping with butter and warm maple syrup. Cancel all your plans for the day as you will find yourself in a food coma as well as about 1000 calories over the amount a reasonable person should have in a day lol....)

Frittata. Two eggs, a bit of onion, a serrano pepper, 2 slices of bacon, half a small tomato, some leftover scalloped potatoes. No cheese, there is cheese in the leftover potatoes.
I sautéed the stuff, then poured the eggs over. I had the oven heated to 525°; I put the skillet in the oven, turned off the heat, and waited for the eggs to set.
This was amazingly delicious. Like, I laughed out loud at the first bite.

Posted this once before and some found it a little interesting. I still had a matter of the shrimp that I didn’t cook with my Wib eye. So’s I got the wok out and made some scrambled eggs.
A little tamari sauce & fish sauce with the shrimp. Set aside and started the eggs with spearmint, chives, salt, white peppe & onion flakes. Brought the eggs halfway home and introduced the shrimp to the action. Topped with an Ethiopian blend coffee, yessir!
