Eggs Frico. This is really simple: shred the cheese and melt it in a non-stick pan, then add the eggs on top. I crack them in a bowl first. Cover the skillet to help the eggs cook before the cheese overcooks. Add (just) a teaspoon of water to steam things along if they aren’t cooking fast enough. The little bit of oil in the cheese plus the non stick surface releases perfectly every time.

Kitchen sink breakfast burrito/taco! The kids are here for a visit, so I whipped up a pretty-much-everything Sunday burrito brunch: tomatillo habanero salsa, bacon, chorizo, eggs, hash browns, avocado, queso blanco and shredded Monterey Jack, and some crema.
The secret to this is textures. The bacon and hash browns give crispiness and mouth feel that really compliment the flavors. So let those hash browns on for about 5 minutes more than you think you should.

I did a little experiment today. I made an egg bite for SWMBO. The idea is that if she liked it, (and she did), I could make a half dozen and freeze them so she could have one any time she wanted. You can put any ingredients you want in them and ya don't have to make them all the same.
This one had sauteed onions and bell peppers 'cause that's all I had on hand.
Easy to make too:
6 eggs
1/4 C heavy cream
Salt and pepper to taste (Kenji sez adding salt to the scrambled eggs 15 min before cooking will improve texture)
peppers (or not)
onions "
bacon "
cheese "
whateverelseyawant
Preheat oven to 350°
Add S&P to eggs and scramble eggs and cream
Divide egg mixture evenly into muffin pan (make sure pan is well greased)
Divide addins evenly into pan (or you can add them first)
Bake 20 - 25 minutes
Remove from pan, (use a plastic knife to loosen each bite), and serve or freeze

Jfrosty27 Hah! I appreciate the compliment Jim but I’m sure you’ve noticed how few posts I’ve made lately so don’t know some of the unhealthy foods I’ve ingested. I just received my shipment today from Porter Road that will satisfy my less healthy, carnivorous cravings for some time to come.

Breakfast omelet taco? Taco omelet? I don’t know, I’m just using up leftovers.
A couple beaten eggs, some cheese, salsa, and tortillas, serrano and onion, some corn and some bacon.
I wanted some of the stuff in the eggs, and some of it as omelet filling, so I sautéed each separately.
I mixed the peppers and onions into the eggs. Normally I’d temper them a little first, but things move pretty quickly on the griddle and you don’t really have to; just scoop them into the beaten eggs and pour it all on to the griddle.
ORDER UP!
This was excellent. I didn’t know what to expect by including the sweet corn; what happened was that it tasted like both wheat tortillas and corn tortillas. 10/10, will make this again.

I used RonB idea above and made some egg cups.
mine have chopped bacon, hot peppers, and American cheese.
Not particularly pretty but damn tasty, and will be good for quick work day breakfastes...

Today we are using up lots of leftover stuff to make… chilaquiles!
The remnants of a bag of tortilla chips, the broken pieces of bacon left from last night’s bacon cheeseburgers, and the last half cup or so of salsa rojas, all fried up in a skillet:
Add some shredded cheese:
Add a couple eggs:
Cover and cook (adding a few ounces of water helps by creating steam):
ORDER UP! CHILAQUILES!
Dear daughter says: “This actually tastes like real Mexican food, like something you’d get at a restaurant.” I’ll take that!
