So I made this yummy little sandwich this morning. Italian roll (just toasted enough to soften it), prosciutto cotto, fontina, eggs. Lots o butter! Because butter. And I didn’t crop out the African Violet because I’m still amazed I haven’t killed it.

          Looks delicious.
I am not a fan of cooked spinach, but I'd damn sure tear that up

          Texas Dave’s Pepper Powder.

Local breakfast sausage, eggs, sourdough pancakes and wild blackberries from our freezer:

It was good. I'll probably do waffles one day next week.

This morning, I summoned my inner Mosca and barelfly to make breakfast tacos in my CS pan of scrambled eggs, white cheddar cheese, onion, sautéed mushrooms, mixed baby greens, sour cream and topped Tabasco Sriracha sauce.

            Nice breakfast tacos.

I like making them because a lot of the “fill” can be vegetables. So I can make a filling breakfast and keep all the flavor and nutrition. I step over the line with cheese, but a little cheese goes a long way in a taco.

          Quick guacamole on frico.

Glad you were inspired. I'll do it after next trip to the store.

Tortilla de coliflor is just a fancy way to say cauliflower frittata.

This morning was sourdough waffles, Swedish potato sausage, blackberries and maple syrup. I used my Griswold waffle maker and had breakfast plus put about ten waffles in the freezer. I only use this waffle maker 3 or 4 times a year.

cheesy scrambled eggs and homemade maple sausage.
Half of a day past perfectly ripe avocado.
All with a few dashes of one of my favorite hot sauces.

This kinda didn’t do what I wanted it to do when I was thinking about what it was going to do. But it came out really good all on its own.

I finely diced some green and red pepper, mushroom, onion, and pepperoni, and started sautéing it in a skillet. It was going to be the filling for a pizza omelet, but it turned out to be way too much for just two eggs. So I decided to make it a frittata. But then it was way too thin and flat.

On the other hand, aren’t all these egg things just variations in texture and shape, and the way the elements hit your palate? So I topped it with pizza sauce and mozzarella and stuck it under the broiler.

If I had a diner, I’d have a spot on the menu called “Whatever I feel like making at the moment, $15.95”.

This morning it was a McSanta Maria Tri Tip muffin sandwich. Smoked & seared a Tri Tip with Susie Q’s Santa Maria Style seasoning last night. Microwaved an egg with a dash of Susie Q’s, topped with a few thin slices of last night's Tri Tip, topped with sharp cheddar and delivered on an English muffin! That Santa Maria Style Seasoning was the seasoning I have been searching for to perfect the breakfast McSandwich! 😁😛
