This morning was sourdough waffles, Swedish potato sausage, blackberries and maple syrup. I used my Griswold waffle maker and had breakfast plus put about ten waffles in the freezer. I only use this waffle maker 3 or 4 times a year.

Breakfast Tacos Tacos Tacos...
Diced Tri-Tip, eggs, mushrooms, green peppers, yellow onions, and spices, including garlic, cilantro, Mexican oregano, ancho, cumin, lime and olive oil scrambled together. Gently nestled in the new Old El Paso flour tortillas.
Topped with shredded cheddar jack cheese and homemade crema.

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
This kinda didn’t do what I wanted it to do when I was thinking about what it was going to do. But it came out really good all on its own.
I finely diced some green and red pepper, mushroom, onion, and pepperoni, and started sautéing it in a skillet. It was going to be the filling for a pizza omelet, but it turned out to be way too much for just two eggs. So I decided to make it a frittata. But then it was way too thin and flat.
On the other hand, aren’t all these egg things just variations in texture and shape, and the way the elements hit your palate? So I topped it with pizza sauce and mozzarella and stuck it under the broiler.
And plated that sucker. Order up!
If I had a diner, I’d have a spot on the menu called “Whatever I feel like making at the moment, $15.95”.

This morning it was a McSanta Maria Tri Tip muffin sandwich. Smoked & seared a Tri Tip with Susie Q’s Santa Maria Style seasoning last night. Microwaved an egg with a dash of Susie Q’s, topped with a few thin slices of last night's Tri Tip, topped with sharp cheddar and delivered on an English muffin! That Santa Maria Style Seasoning was the seasoning I have been searching for to perfect the breakfast McSandwich! 😁😛
