Lol! I was wondering how long it’d take for someone to ask. Back in the 70s when there were lots of murders going on in NYC, Jersey City (literally right across the Hudson River in NJ) was murder free and went by Chilltown. The “financial settlers” who have come to JC in the last couple decades due to its proximity to Wall Street are trying to bring it back and make it a thing. I am a creature of habit. I will eat the same thing for breakfast day in and day out, but I do switch it up every 4-5 months or so. Here's my current edition, based on the "40 second egg" of Chef Andrés fame.
It is a toasted Thomas multigrain english muffin (I wish I liked their whole wheat ones, but they are so dry), sprayed with just a tad of butter spray (you don't want to make it soggy after all that toasting), then a 40-second egg (50 seconds in my case) which is flavored with Tajín and Trinidad Scorpion pepper flakes (breakfast is supposed to wake you up), then a slice of HEB's smoked cheddar cheese (which is actually smoked, not liquid smoked), a beefsteak tomato slice, and two slices of turkey bacon (shush, it's good!), served with a bella mandarin.

So I decided to tackle biscuits again. This recipe used sour cream. They were ok. Needed salt.
of course, since I bust chops on “crumb shots” here it is broken open. The darker parts are the bottoms.
and every decent biscuit needs sausage gravy! I ate the first one with blackberry jam.
and a shake of TDHH 😉

Let me dig through some stuff. I haven’t found my personal recipe book as we unpack. As soon as I do I’ll send you mom’s biscuit recipe. They have cream of tartar in them and are great. You won’t need any special flour. All mom ever used was Gold Metal.
