    Sausage, egg and cheese muffins (no bread). Very easy and we made enough for left overs and froze some as well.

ID:	1814127 Breakfast for dinner tonight. A simple omelet with pulled pork, onion, red pepper, and cheese. Strawberry Jam on a Biscuit and a Clementine. So fun to make and my Wife liked it so it was a win!

        I did this because tomayto tomahto potayto potahto. This is a tomato and leftover scalloped potato (and cheese) omelet, with Texas Dave dust and tomato-poblano salsa.

          This is becoming a breakfast repeating 4 - 5 times a week. It’s a cup of finely diced sweet potatoes, and a cup of finely diced carrots, pan fried on stove top. Two eggs over easy in the same pan. Aromatics are seasoned with a bit of butter and garlic, topped with black pepper, Aleppo pepper, purple onion, fresh parsley, & thyme,

            I like it. Carrots and sweet potatoes are outside the box for a breakfast food, but there shouldn’t be any rules other than “If it tastes good, then it is good.”

            Sunny Side Up looks really nice.

          When you’re rooting around in the freezer and you find a sixer of H-E-B tortillas that you froze last spring. That is a great feeling! (There were TWO of these. That is a GREATER feeling.)

            First: the best way to save half an avocado is obvious. If you have a vacuum sealer, restore your half an avocado as close as you can to its natural shell.

            Wrap it like this. You want to leave the pit in the half you’re sealing, because that hole will oxidize; a suction sealer won’t fill it.

                I really like an egg on my chili rellenos too. That looks so good!

              Skillet something….. Yukon gold, leftover sausage from pizza, shredded pepper jack under the egg, bacon, OE egg, topped with TDHH. And the ubiquitous egg yolk waterfall.

              Frittata. I had one mushroom, half a small tomato*, a single scallion, a piece of yellow pepper, not enough ham for a sandwich, and enough cheese to cover 2 eggs. Used all that up; when it was sautéed, it was too much to fill & fold, so breakfast went this way instead.

              * I found an exception to Mosca’s Rule of Tomatoes. If you cut the tomato longitudinally instead of latitudinally, and wrap it in plastic wrap, it will be acceptable for use for a couple days. It’s the cutting through the seed sacs that make it sloppy. When you cut in half from the top, the most seed sacs you cut through will be 2, and sometimes none. It’s usually one, though.
