Finally closer to normalcy, still a ton of house to unpack and put somewhere and decide it belongs somewhere else etc...
But with the dining table finally cleared off we sat down and had our first family meal at the table.

butter tortilla is from Mercado Gonzales (a food hall meets Northgate market, our local Latin market chain). Closest thing we get to HEB.

This morning I did an egg bake thingy.
Full disclosure: it came from a kit. My wife was picking up some fresh brats for the weekend from a local sausage shop we like. They had these kits all made up. In one package was the dry stuff. Crumbled breakfast sausage (house made), diced mushrooms, onion, fresh bacon crumbles, shredded hash browns, and a couple types of shredded cheese. The second package was a tub of the premade egg custard.
Hit the baking dish with Pam or similar, dump in package #1, then top with the egg custard. Let that soak in for a minute or two. Bake in a 375 degree oven for 45 minutes. What could be easier? Totally delish.

texastweeter I preheat them in the air fryer at 400° for 4 minutes. Pull them out real quick and spray some non-stick spray, plop the eggs in and run 360 for 5-6 min.
