Finally closer to normalcy, still a ton of house to unpack and put somewhere and decide it belongs somewhere else etc...

But with the dining table finally cleared off we sat down and had our first family meal at the table.

Links at breakfast are the best!

The humble, yet perfect breakfast taco. Soft scrambled eggs, TD Fiery, Colby-jack, butter tortilla. Salsa from the fish taco place.

butter tortilla is from Mercado Gonzales (a food hall meets Northgate market, our local Latin market chain). Closest thing we get to HEB.

Shameless plug in the background 58limited

More of a small brunch after I had my fried eggs.

Chia seed, milk, vanilla extract. Sat overnight in the fridge.

You love it or you hate it. I loved this morning's breakfast of hard boiled eggs, cottage cheese, anchovies and some kimchi for gut health. Lots of protein and nutrient density.

That’s a lot…..I need to get more kimchi in my life. I just keep “trying” to like it.

          Im down.

@SheliaAnn How are you with kimchi-adjacent flavors? Like gochujang? And, since Oktoberfest is coming - do you like sauerkraut?

I love gochuchang. I detest sauerkraut. I’m a bad polish person. (Polish and Lithuanian to be exact). Boggled my grandmas mind. I wouldn’t eat it.

          And I love stuffed cabbages!

ID:	1883433 This morning I did an egg bake thingy.

Full disclosure: it came from a kit. My wife was picking up some fresh brats for the weekend from a local sausage shop we like. They had these kits all made up. In one package was the dry stuff. Crumbled breakfast sausage (house made), diced mushrooms, onion, fresh bacon crumbles, shredded hash browns, and a couple types of shredded cheese. The second package was a tub of the premade egg custard.

Hit the baking dish with Pam or similar, dump in package #1, then top with the egg custard. Let that soak in for a minute or two. Bake in a 375 degree oven for 45 minutes. What could be easier? Totally delish.

Cooked a dozen eggs with cheese and chopped onion on the flat top. Also a pound of bacon. Fixed myself a small plate, washed down with a large glass of whole milk.

Can’t go wrong with that. Also, do I spy a homemade tortilla?

Andrrr I’ve been tempted lately but nope. Just a funky shaped one from Trader Joe’s. I steamed it on a gas burner so it’s gets some char…which I like

Homemade waffles. Each person I cooked for likes it different.

Amanda - butter and maple syrup
Caroline - butter and honey from the farm
Emma - butter with homemade dewberry jam (pictured)
CJ - like his Dad, butter and molasses (pictured)

              Perfect!!!!!!!

Air Fryer "fried" eggs. Went too light on the salt and too lazy to go back and get more. Other than that......new way to cook eggs.

texastweeter I preheat them in the air fryer at 400° for 4 minutes. Pull them out real quick and spray some non-stick spray, plop the eggs in and run 360 for 5-6 min.
