Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
I been spearmintin with a basic mix of ricotta, roasted garlic, lemon zest, olive oil, salt and pepper. It’s straightforward: roast the garlic, mash it, mix everything together and then whip that stuff up!
From there, it goes anywhere. I’ve added basil, or rosemary, or tarragon. I’ve switched the lemon to lime. I’ve added the juice. I’ve added Parmesan. I’ve added balsamic vinegar instead of the juice.
I’ve never been much on presentation, but I’m working on it, a little. I’m just so literal and representational when it comes to that stuff, and I often over adorn by thinking, “Let’s add this!” But, so what.
I used lime zest and lime juice, added cilantro, and piped it onto tomato and avocado slices with sunny side up. I sprinkled a little parm on top, and some habanero salsa, and served with tortillas.
It makes a nice taco.

I am loving these tortillas i brought back from the meat up. Breakfast tacos. Scrambled eggs with some melted cheese, TN Pride spicy breakfast sausage crumbled and cooked with onion, homemade pickled jalapeños, chopped tomatos. Melinda's green hot sauce on one, Melinda's fire roasted garlic and Habenero on the other. HEB buttered tortillas. Once I get the molcajete going and make some salsa I'll be dangerous.

Getting some use out of the Blackstone. With just the wife and I it’s a little overkill, but it’s fine since I’ll cook ahead and make leftovers during the week.
bacon, eggs, and spam! Wife likes super crispy bacon (but not burnt!), so it’s a little tricky hitting that sweet spot. The Blackstone excels at that.

I’ve found that the best way to make griddled bacon is to do the whole pack at once. Remove early what you’re not going to eat right then (for example, if you’re making bacon burgers leave 4 slices to the end). Over the next week, those can get touched up with 30-60 seconds in the microwave. They’ll still taste griddled instead of nuked. So you can hit 2 slices with breakfast every day, for 6-7 days.
