      I been spearmintin with a basic mix of ricotta, roasted garlic, lemon zest, olive oil, salt and pepper. It’s straightforward: roast the garlic, mash it, mix everything together and then whip that stuff up!

      From there, it goes anywhere. I’ve added basil, or rosemary, or tarragon. I’ve switched the lemon to lime. I’ve added the juice. I’ve added Parmesan. I’ve added balsamic vinegar instead of the juice.

      I’ve never been much on presentation, but I’m working on it, a little. I’m just so literal and representational when it comes to that stuff, and I often over adorn by thinking, “Let’s add this!” But, so what.

      I used lime zest and lime juice, added cilantro, and piped it onto tomato and avocado slices with sunny side up. I sprinkled a little parm on top, and some habanero salsa, and served with tortillas.

      Swapped out the lime ricotta for lemon. Broke a yolk so made it into an omelet. Ham inside, everything else riding on top.

        Holy smokes. Every day with that thing!

      I am loving these tortillas i brought back from the meat up. Breakfast tacos. Scrambled eggs with some melted cheese, TN Pride spicy breakfast sausage crumbled and cooked with onion, homemade pickled jalapeños, chopped tomatos. Melinda's green hot sauce on one, Melinda's fire roasted garlic and Habenero on the other. HEB buttered tortillas. Once I get the molcajete going and make some salsa I'll be dangerous.

        Purc I bought a lot of tortillas. I am glad they freeze well. I realize I hadn't had great tortillas at home before. I had some generic supermarket ones in the pantry - I threw them away, and I hate wasting food.

        They are incredible! Start with the salsa molcajete in the booklet that came with the tool. I just broil the stuff in the oven: I can wake up at 7 and have salsa by 7:30. Cut tomatoes, cut a couple peppers, toss in some garlic, broil for 10 minutes, chop some cilantro. Salt, mash, serve.

        Mosca that is the plan. I am pretty anal, so i went back over it with the rice a couple more times and I am satisfied. I'll be making it this afternoon.

      Since you can’t really see the roasted potatoes, green onion, Italian sausage and mozzarella….. here are my sunny side up eggs 🤪 🍳💗

      Steak and eggs with flanken short ribs.

      I reheated the steak in hot water; our tap water is 120°, so I just did a couple refills.

      For the eggs, I did that thing where you continuously spoon the hot oil over the yolks. It’s a pain in the ass, but it does make some nice yolks.

      Bob Evans came for breakfast this morning with a couple of previously baked potatoes, eggs and toast. Didn’t pay attention during the photo but breakfast is on one of our daily driver chipped plates. I can say that the plate had no negative effect on the flavor:
