    TITOOOOOOOOOOO'S vodka is flowing, ribs getting smoked with hickory and orange wood, small shoulder under the ribs.



    I love this WSM 14.5 AKA LIL SMOKEY!! I think it cooks better than all my cookers.

      [Napoleon Dynamite voice] LUCKY! I have have to flippin work all flippin weekend starting tonight. (But at least the 2nd half of Sun night and the first half of Mon night is holiday pay = 2.5x time) so I shouldn't complain.

      Couple Not so slow 'n seared St. Louis in the kettle. Lit 17 briquettes, set the Auber for 275, and let that puppy sing for an hour. Flipped the racks in the rib rack, brought her down to 250. After another hour came down to 230. One rack took a bit longer. Have to work in the morning so I didn't have enough time for a 5-6 hour cook. Wife made some awesome potato salad.

        After work grilled burgers. Served open face on whole wheat toast. Horseradish mayo. Sautéed onions, cherry tomatoes, mushrooms, chives with blossoms on top.

          I love me a good hamburger steak, don't even need bread on the bottom. Very nice!!!

            Look who is talking! GEESH!!! LOL

          A little late - because work - but for Mother's Day this year I made reverse-seared filets (cut them from the loin myself) with a mushroom and burgundy reduction, alongside a baked sweet potato (her favorite) and prosciutto-wrapped grilled asparagus. Dessert was cocoa-crepes stuffed with vanilla bean and coffee ice cream and topped with hand whipped cream.

ID:	84504 Duck a l'Orange, cooked on the 22.5 weber with rotisserie. Took the temp to about 180 in the breasts in the quest for crispy skin. Dry brined and dried in the fridge for about 30 hours, pricked about 100 times for drainage. Smoked with a little bit of thyme, sage, and orange peel. Presented upside down...whoops...

                  I miss cobbler from Texas almost as much as 'Cue. Can't remember the place in South Dallas, industrial area, kind of diner-ish with older waitresses with beehive hairdos, that made THE BEST cobbler.

                I warned y'all about this weekend LOL!
