These look great - how long are they in the cook box and at what temp?

I always turn the KBQ all the way up and let the KBQ blast them with smoke. All poppets wide open. kmuoio

    Looks great. Prep/seasoning?

Looking forward to lighting up the KBQ tomorrow. Spent most of the last few weeks in Houston.

That is always a good day. I need to fire mine up again soon too. Then I can do more live fire cooking with the Finex as well.
Give that a try tomorrow on the firebox.

Although our temps have dropped, we are still dry. Rain forecast for next week, however I'll be spending a fortnight working out of town. But when I get back a pig harvest is in order and the KBQ will roar!!

Oh hell yeah! Make sure we get some pictures of that throw down. ComfortablyNumb

Trimmed up a brisket Saturday that is headed into the KBQ on Sunday. I also picked up a Weber Jumbo Joe for my son, and some NY Strips for his first cook.

Brisket point section. I don't mess with the flat. It's a waste of money, just my opinion

Again pics like are why I bought a KBQ. Ernest as always your the king.
I’ve never tried to find just the point all I ever see are flats or whole packers, but I’d do agree the point is meat candy.

Ernest, I'm with you. Flats are for pastrami - points are for smoking and enjoying ;-)

The wife and I have meals for the week. Pulled pork and veggies.

Struggling with mine, so I bought one of these as well. $45 with shipping.
It arrived quickly and fits fine.
              Looking forward to trying it.
