          I did 3 racks of ribs last Monday night David Parrish and be doing a brisket or a couple racks of beef short ribs...haven't decided yet

        DWCowles where do you purchase your beef short ribs?

          I get them at Kroger's dirtman if they don't have them in stock I will have them to order them for me.

          DWCowles is there a big quality difference from choice to prime or wagyu? This will be my first attempt at Short Ribs. SRF Wagyu Brisket has made me a much better pit master of brisket!

          I've never had prime or Wagyu beef ribs but l would say there's a difference in quality

        Been working these 12 coals for over 6 hours now. No more, no less. Smoking up some sausage today in this Texas heat is a chore trying to keep the temps low. This is all I got!

              I love how the donut looks when I dump the coals from the chimney. I need a picture of that at night when I'm gonna cook a brisket

            Here a few low quality shots of a YS640 I snapped when I was at a cooking class last friday night. It was an absolute blast. Here we are making Carntias (in the foil) and warming up the YS for to throw on the Tri-Tip we have waiting inside. This was was a real joy to cook on.
