              I am a BBQ / Smoker junkie...I collect them, what can I say, I tell my wife everybody has to collect something. What are the opinions and thoughts on Pellets vs. Hardwood smokers, pros and cons of each. While pellets seem easier, I feel like I am cheating... Thoughts

                I have absolutely no problem using pellets, smoke wood chunks, etc. As far as I'm concerned, whatever gets the job done and puts tasty Que on your table that you, your family, and friends will enjoy, is perfectly fine. Me? I'm a kamado guy.

                Welcome to The Pit Sauzier Boulder! The biggest pro of pellets is set it & forget it ease of use, and the biggest con as I see it is you cannot make your own pellets so you have an automatic fuel expense there. If by hardwood you mean burning logs, as in an offset, then you make it all happen. There are no fans, no dials, no knobs or extension cord helping you along. That can be a pro or a con depending on your level of interest an commitment to our hobby. If you cut your own wood then running a stickburner is a cheap endeavor as far as fuel, and if you learn how to manage your fire it is very tasty and as real as it gets. If you mean a cooker like a KBQ, that is sort of a hybrid between a pellet cooker and a stickburner- it uses real wood chunks, but has electrical components aiding in the combustion process, taking much of the work away from you as pitmaster in keeping the flame rolling... but it still burns wood and has phenominal flavor. Too, a person can use a kettle grill with charcoal and some chunks of wood and get nearly identical flavor to a stickburner if done right. Regardless of which device you use, I would venture to say anyone who tastes pellet-cooked food vs real wood food would likely pick wood as king. But taste is subjective. If you like a lighter smoke presence a pellet cooker would likely do just fine for you. If you taste food from a stickburner and had trouble maintaining a good fire or the pitmaster didn't know what he was doing you might think it's terrible.

                I'd encourage you to visit two places: the Introduce Yourself channel, and give us a little bio about yourself, and the Grills & Smokers channel and repost this question there as its own topic. Far fewer people will see this questions here nestled under the Feed the Flame thread. I will repost my answer when you post this question there.

                      Huskee Yes, since I am learning this stick burner, my last brisket had some off taste from some cherry that I think was wet. So i thought i would dry some out while pre-heating the pit.
