I haven’t had particularly good success with Tritip. I’ve never cooked a better grade than choice. Was yours prime?

LA Pork Butt Sunny, no, choice from Kroger and it was great. Bought 2 and the other is frozen. Love Tri Tips. Always reverse sear on the Kettle. Tried it once on the Bronco and it was not as good. Try a reverse sear on the 13th day of Christmas on your new pellet grill.

I tried it both ways reverse sear and cooking like a brisket. The 1st one I cooked like a brisket. I think the reverse sear doesn’t work for me because I like it medium and doesn’t get as tender as I would like. The last one I did was like a brisket. I might be looking for it to come out more tender than possible. It has never been bad, but has never met my tenderness expectation,

Some cold evenings down at the sauna this week......

Yeah, they are. I love it when they get that snow on top of them.

I love the slap sound of a raw tomahawk on the palm of my hand. The waitresses at Gibson's Steakhouse in Chicago used to do that when they were showing customers available cuts of meat at the table. It was always fun to hear that slap sound, and more fun to eat that hunk of meat!
