jmott7 How do you like that sauce, any tweaks?

A little fish sauce. And tonight I was out of white sugar, so I had to use brown. Terrific! Thanks again.

I was commenting on what I wanted to cure next. Too bad them beef tenderloins run upwards of $100.

                Thanks for torturing me.

I'm sure it was still delicious! One time it will be just right ,next time a little bit too salty. That's my delima. Unless you do it from scratch its a crap shoot.

Pulled beef nachos are incredibly good. FAR better than pulled pork nachos.

That looks cool. Like how you're doing that. Corn beef brisket is what comes to my mind. I'm narrow minded when it comes to BBQ. Chicken, ribs, roasts, briskets, and sausage, some Tri tip is basically what I have come to make to my taste.

Ernest one "r" in this Jerod.

Not yet, I have a loooong pipe fence that needs sanding and painting in spots. Then I can sand this baby and get to that. I did that with the firebox on my cheap offset. Worked great.

Beef Short Ribs. Having the same trial get adjourned twice in 2 weeks for out-of-left-field reasons both times, has convinced me I should be cooking instead of working.

All cut in half. Nothing but Choice at Wal-Mart. The 16.54 pounder I picked up last night is thick, with plenty fat in the flat (for a flat )
