      Well. It was cold. But the Silverbac and WSM were spot on. Did 2 prime Costco briskets for an open house Christmas party. Burned a lot of pellets and the WSM took its time to get to temp but it all worked out. Threw them on 11:30 last night and they were done in about 12 hours pre rest. Wind was at 18mph but my kids did just fine. Brisket was amazing too. If anything they were done too soon because they sat in the warmer for a few hours. Flat was a little dry but otherwise it was delicious. Hard to compare which was better because I used Holy Gospel on the Silverbac brisket and then a basic SPOG rub on the other.
