    So I made an egg sandwich for breakfast. Absolutely did not need cheese with that fat cap.

    Trimmed a bit of the fat cap to render to fry the egg. It was delicious.

    Christmas Leftover Crab Cakes, Pan Roasted Broccoli, and a Salad. I wasn't able to post any Holiday Cooks so I'll have to post the leftovers.

        Thank you! Mine's in the oven now, thank you. Had all ingredients except canned soup, we typically don't keep canned stuff, but didn't have time to make it from scratch tonight. I DID use whole wheat pasta though. We like the tooth feel when it's a casserole style pasta dish.

      Made some enchiladas using the leftover al pastor chicken I cooked using the Brazilian style skewer pan gifted to me by my Secret Santa this year - full details on that right this way. Had two vac-sealed portions of 10oz/285g each, and I heated that up with some mild green chile enchilada sauce (canned from the store) and then used it to fill the layers of my flat enchis. Plenty of shredded cheese, more green chile sauce, and chopped green onions.

      These were just excellent, way better than I had hoped for. The al pastor flavors with the green chile were wonderful, and the flavors were subtle enough to allow the very nice flavor of the corn tortillas to come through. Typically when I make red chile enchis, that note gets overpowered by other flavors...

          Twice smoked ham made into 5 quarts of split pea soup, vac sealed, and ready for the freezer. 1 other quart of the soup has already been eaten.

                        Ribs and more Ribs. I made an air fryied potato. A small russet, cubed and soaked in salt water for about an hour. Canola, pepper, smoked paprika and FlatIron Dark and Smokey.

                        On another note, I took 2 ribs, sliced off the bone. Enough for 2 McRib sandwiches. And 6 ribs for my S.I.L. and middle (13) grandson.
