From my previous rib post, a second offering of leftovers. I had froze the leftover cubed up rib from the burrito cook and made some porter drunken beans.

      I'll take one.

Leftover salmon steak from the weekend. Served with some baby bok choi. I especially like the way the salmon seasoning gave it a rich and crunchy seared finish while maintaining a perfect and moist interior. Cooked wide open in the Weber 26 with a full chimney of coals in the SNS.

You have some seasoning debris scattered outside the edges of your food on the plate….A- 🙄

We went out to eat last night, and I had an excellent Italian pork chop that I only ate half of. I sliced it against the grain using a mandoline, and made a nice pork chop sandwich!

Just another midweek dinner of a portion of Belly Buttin' Chilibeans, with pork belly and pulled pork for protein and Domingo Rojo beans. Yumbo!

DaveD you know my favorite part of this picture!

Brisket on my WSM22 on Saturday. Today made a stir fry of potatoes, peppers, onions, then some cubed brisket and Malcom’s vinegar BBQ sauce on the flat top. Click image for larger version

Great way to use the leftovers.

pork tenderloin on the Santamaria I was surprised to see light smoke ring the left over picture is a day old the cook was yesterday. Thunderstorm snuck up tried to drown my fire I was lucky to have a sheet of corrugated plastic for a makeshift
roof no wind so it worked. This turned out to be really good I'm still learning this grill.

      That cooking space is fantastic!!

Before was it in sandwich form, tonight, open-faced. So, so good.

(Gravlax with cream cheese, red onions, and capers on buttered and toasted English multi-grain muffins. I've found I prefer this on english muffins as bagels are just too heavy.)

I’m a pickled jalapeño instead of your capers but this looks awesome. 🔥🔥🐿️

Leftover chicken from last week, when my lovely bride did a 24 hour buttermilk brine on a whole bird. Despite the meat having been vac sealed, the white meat was just a wee bit dry, to our surprise, but still super tender and tasty. Dark meat was still spot on. I roasted some fingerling potatoes to go with, and plated with some steamed zucchini. Simple but effective.

      OG dish… beef cheeks

extra cheekys became tacos… because tacos. I sliced them thin and added to sautéed onions and red bell peppers. Some pico as well. Cotija cheese not shown to present the taco better.

Same as it ever was... another portion of the Belly Buttin' Chilibeans I made a while back. Both smoked pork belly and pulled pork in there, along with some Rancho Gordo Domingo Rojo beans and some roasted Hatch green chile. Super yummy. Usual delivery system
