Heated up some of the leftover turkey and dressing. Served on some butter-toasted bread (unfortunately, cheap bread), with Ohio made swiss cheese and mustard! A bit of a Dagwood style sammich!

bbqLuv They are high-class after all! Funny story, my wife makes everyone eat off paper plates when they come over. We're talking thanksgiving, Christmas, whatever. Then she stores the leftover plates and says, use these instead of the regular plates. We have a dishwasher. I don't really like eating off paper plates and prefer that everyone have a decent plate to eat off of. So, typically, I eat everything off paper plates until they are gone. As fast as possible.

It's Thanksgiving leftovers day in our house today. We spent Thanksgiving evening with the neighbor couple whom we invited to move in with us in the days following Hurricane Helene just over a year ago.

Their generator had failed, so we all camped out at our house, sharing friendship, ragtag meals and maybe not just a little booze. We evacuated together, wishing each other well as we parted at the proverbial fork in the road.

They wanted to share a thankful evening with us this Thanksgiving, so invited us to enjoy their turkey dinner spread together. It was wonderful. We all counted our blessings.

So, since I had already cooked and frozen half of a full Thanksgiving Dinner just over a month ago, I have pulled it from the freezer. We'll celebrate our own little very thankful after-Thanksgiving Thanksgiving dinner tonight. I can hardly wait to taste that smoked turkey again.

The token turkey sandwich! Slathered with homemade mayo, crisp romaine and Swiss on a Kaiser roll.

Leftover turkey breast only (I'll be gnawing on a leg later tonight) got plopped into a gorgeous turkey stock I made overnight. Only four ingredients that might be a little out of the ordinary... 1. Potatoes 2. Mini lasagna egg noodles in additiin to traditional egg noodles 3. Sage 4. A dash of MSG

No before photos, but I took some left over Turkey breast, the giblets, gravy, pan cooked a mirepoix with onions, carrots, & celery, I had a few homemade pie doughs that I could use…

So we went with a Turkey pot pie today.

            Today's lunch at work..
I had some leftover shredded chicken from my buffalo cheesesteak cook the other night
Reheated with a heavy dose of Trader Joe's Peanut satay sauce.
Jalapenos, cheddar jack cheese, and a few splashes of Tingly Ted's Tingly sauce..
Missing are the pickled red onions that i forgot to put into my lunch box this morning 😠

Love Tomato soup. Is that a glass of water or vodka? Kidding.

I didn't cook tonight but wrastled up a meal using leftovers. It's been a long week and I'm on deck to work tomorrow. Heated up the homemade beef stroganoff prepared earlier this week and added a little beef broth for moisture (better than bouillon base and water). As that was warming up, I heated up the smoked beef shanks and shredded. Once the stroganoff was hot, added a little sour cream to thicken. Plated it all up and dinner was complete!

I'm the blessed man to receive a Snake River Farms WAGYU Brisket in Secret Santa. I always save trimming, and here are the trimming from that Brisket cook.

I'm sorry, I really have to curb this posting food cooks. Maybe a New Year resolution? So, tonight I pulled a couple of the beef back ribs out of the freezer from a previous cook. Meat off the bone and chopped. Buttered egg noodles. Seasoned as pictured. In the C.I. pan. I was going to use the C.S. but I kept hearing faint sounds from the cabinets, "use me". Who am I to argue?
Ironically, based on the recent picture thread, i did everything you shouldn't do.

Wonderful. Except you can take that asparagus and.. never mind its Christmas Eve. Enjoy.

Xmas dinner was good the next day, too... we included the ribs that had been cut away, which went with the meat into the sous vide at 130/54 for a couple of hours, and then the ribs went under the broiler for about ten minutes. Super tasty!
