      Golden Beets, ??? first, I heard of them. I wonder if that would be a good substitute for potatoes.

      They are sweet. Roasted with some olive oil and your choice of herbs. We really like them.

    Breakfast of Champions, leftover brisket re-heated in hot skillet and two fried eggs...Running the brisket though the egg yolk is definitely a tasty combo...

        The Jerk chicken drumsticks I made yesterday, this time I did put a side together! Steamed broccoli, with butter, garlic powder, and onion powder mixed in to give it some flavor. The chicken hangs in there pretty well, flavor-wise the next day.

        No High Life though, that's kind of a Saturday sort of thing for me.

        Mrs. H turned the duck carcass, giblets and the remainder of a rotisserie chicken into stock yesterday. Today she made soup with potatoes, mixed vegetables and chicken meat. 🤤🤤🤤

        Perfect for a cold winter day.

          Started out as a pork shoulder. About 10 hours in. Turned out well as shredded pork with a bit of sauce. Day 2, back to my roots. Smoked pork chili verde with a Mexican rice (well sort of) as the side AND a red chili pork burrito wrapped in a fresh flour tortilla.

            So versatile: Tacos. Taquitos, Carnitas, With scrambled egg, egg muffin, BBQ Eggs Benedict, Poppers, Dirty rice, Brunswick stew, Hash, Sliders. Grilled cheese sandwich, just to name a few.

                Rescued some leftover N Y Roast from the freezer that was cooked on 2.14.2026, sliced thin and added mushroom gravy.
                Leftover soda bread from two nights ago, warmed and coated with garlic butter.
                This bread set up really nice after baking and a two day rest.
                Side was 4 bean salad from Costco.

                  Saint Patrick’s Day, and of course we were headed to the corned beef and cabbage. Email shows up from Wine Spectator with a different take on the corned beef. Decided to to give it a try. Not bad, but I might make a few adjustments and I missed the cabbage. This AM to the baby potatoes the corned beef left overs, some fresh chives and made hash. Verdict, for hash this may have been the perfect recipe.

                    Decided beer can chicken would be a lazy cook, and it was. 5# free range organic chicken (not because that's how I roll, but that's all Walmart had). Tecate beer, Penzey's 4S all purpose seasoning with EVOO binder. Cooked it on my Weber SearFire at 350 (400 for the last 30 minutes), total time about 1hr 45min, plus resting.

                    From left to right: just off the smoker, first bites, after sandwiches and just before the chicken and dumplings (my wife was crowned Queen of said dumplings, by public acclaim just weeks before our marriage). And at the bottom are the dumplings... burp!

                      What a relief, there’s more than one of us who will cook beer butt chicken! How are things in SW Okla these days? I need to get to Temple and see the sister there soon.

                      PBR Beer Can Chicken?

                    Just found out there's a fancy steakhouse in Temple... I mean upscale, if you and I pooled our money we could get a baked potato. OK, maybe not that bad, but really surprised me.

                    And I used Tecate, which strangely enough is available in my local convenience store but not PBR... go figure.
