    Winner, winner rotisserie chicken dinner! 5lb yardbird. A light coat of olive oil and then rubbed with Sauer’s chicken rub. Cooked on the Kamado Joe Classic at 400f (dome temp) for 1.5 hrs. Served with a side of broccoli casserole. On point!

      5#? Big ole chicken or small turkey? I have never had a 5# chicken. At my old job, we had 3.5-4# birds at the largest.

    Garlic and herb pork loin, new potatoes, buttered green beans, and apple-celery-walnut salad dressed with vanilla yogurt and cinnamon.

    Yardbird on the SNS Kettle ….. Potato chip crispy skin! Used Meathead’s poultry rub on it, tossed in a bit of oak and let some smoke roll

    All 4 kids have flu. Smoked some chicken thighs and used the bones plus some flappers and a spine in the freezer to make stock. Used for smoked chicken noodle soup

    One of our Grandsons in Ohio will receive First Communion in a few weeks along with a couple of his Cousins. I was asked to smoke Beef for Sandwiches for a pretty big crowd. Started with 63# of Beef Chuck and Arm Roasts and it yielded about 33# of Smoked Pulled Beef. The LSG Adjustable Grill/Smoker was run in "stick burner mode" with Jealous Devil Chunks and Oak Splits. It turned out good but the real judges will be voting in a few weeks. It was done in two batches. Pictures show

      Skip Now thats a big cook! Curious, how will you freeze and re-heat to serve that?

    I boiled down some smoked beef rib bones, with some onions and other scrap and then strained it into a ramen, with the good beef chunks left in, then nestled. Nice poached egg in the center of the nest.

      Christopher Kimball Milk Street Lemon Zest/Almond Pesto
      This lemon pesto spaghetti is adapted from spaghetti al pesto di limone we had in Amalfi, Italy. We use almonds, Parmesan and chives and add zest to the water.


      Easy, delicious. Check out the emulsification. (My favorite pasta word!) We used Rusticella Bucatini. Follow the recipe: remove the noodles before ready and then toss, toss, toss, titrating with starch water.

      We added some red pepper flakes, not called for in the recipe.

        That's really nice work.

      Shrimp with fresh herb Chimichurri sauce. I wish I would have had Dr. Pepper’s pasta on the side. Dang! That bowl looks incredible!

        HawkerXP I was just going to invite Richard to join our bowls in unholy whatever! I agree that they would have gone together, like....like....like Czech & Italian!

      Chicken breasts cooked on the pellet grill. Seasoned with Meathead's Poultry Rub. Big hit with the family!
      Served with stir-fried snap peas and baked potato.
