    SV Chicken Breast with a GG sear. Sides of pepper/onion mix, brussels sprouts, and homemade honey wheat bread. We're trying to be healthier and sometimes it happens. Not fancy but good.

    Dr. Pepper here is my chicken Vesuvius from last night. I didn’t have peas. I used turnip instead of russets because the turnips were fixin’ to turn (no pun intended). Pic #1 in the cast iron still. Pic #2 plated after I took a bite!

      troymeister I have never had them roasted before. They were kinda creamy, actually.

      Those Costco tri-tip are so good. Really well marbled, some folks think they're wagyu grade. Nice finish on yours. Just wish they would quit tenderizing them

    Dr. Pepper Good spot, he's leg of lamb reverse seared. That's my FEC240 I've got a 120 too. That's a Saturday night load! Love seeing it full, and in fact it works better too!

      MeatMonster Do you sell your final product? Even if you had 15 kids, it would be tough to finish that much meat in a week! And, can you tell me more details about how you cooked your beautiful leg of lamb? Temps, etc. Thanks, Daniel

    7.5 pounds kielbasa. PBC, hickory. Followed this recipe if not low temp smoking. Turned out pretty
    tasty! I like how this recipe gives out percentages of ingredients. Plus, did I say it is tasty?

    This kielbasa recipe was written down by my grandpa on paper from 1966, over 50 years ago

      Omg! I miss good kielbasa so bad, I can taste it! My mouth is seriously watering looking at this. Fine job, sir! I’ll take two pounds in 1# packs, please!

    Not grilled, but this was fun and turned out great. I went with Kenji's Channa Masala recipe but decided to use half a pound of my Rancho Gordo garbanzos instead of canned. I soaked them four or five hours first, and then when they went in I did a hard boil for five minutes before turning down to simmer. They probably simmered an hour and a half or so and then rested on the stove with the heat off for another hour and a half to two hours before rewarming for dinner. Definitely going to go into our regular rotation of comfort food.

    Sesame, Pepper Crusted Pan Seared Tuna, Asian Spiced Red Lentils, Sautéed Spinach and Arugula Salad with Asian Vinaigrette. Below is my wife's lunch for tomorrow. Almost like a Bento Box.

    Kind of an unusual, but nevertheless very good, supper tonight. A result of things that were on sale at the store as well as things we had on hand. Crab legs, baguette, and some sake

    the metal bowl in the middle of the table is for throwing the spent crab legs into

      Looks pretty darned good for just "just making do".
      You're just making life hard using those crackers. A good quality heavy dinner fork will strip crab clean in a fraction of the time.

    A Texas, and Southern staple. Fried catfish, fried okra and hush puppies. Simple but delicious. Louisiana Brand Catfish breading mixed with Tony’s. Louisiana Brand Tarter Sauce. Some of the best around. And once again, I get to follow Ernest.

      Nice !!

    Shrimp skewers tonight. I jammed together a marinade with some lemon juice, soy sauce, oyster sauce, minced garlic, salt, pepper, sesame seeds, minced fresh parsley and some Thai ginger seasoning paste I had leftover from some stir-fry from a few weeks back. Flash-seared on Weber with Gabby's Grills Santa Maria attachment then piled to side of grill to finish. Served with some canned beans, rice and broccoli.

    I liked how it came out. my wife is my biggest critic and loved it. she usually calls much of the meats i cook "gas station" food and refers to my smoked brisket as, "the fatty meat she doesn't like". Mind you, this is from a Jersey girl who will order a $100 Waygu filet at a steak house and ask for it butter-flied and well done! crazy gal. love her to death! (at which time I may brine and smoke her on my PBC.Haha. Kidding. seared on the Weber, of course!).

    Had the pizza oven going the other night after tapping some maple trees for sap. I love burning some red oak in the oven. This one was pork belly, sausage, egg and cheese. Probably my favorite Za to make. I like to pre sear the pork belly in a CI pan in the oven then slice it thin and add it to the pizza.
