    Quick dinner of seasoned pork tenderloin on smoker, then put on flattop to get a sear, broccoli, beets, and a rice side.

      These are jarred beets, they’re decent, but yeah, roasted would be better. But hey, my 10 yo likes them, so I’ll take it. 😁

      Chop rosemary into olive oil. Infuse
      Cover potatoes w water boil about 20 mins
      Smash them
      Cover w the Rosemary oil add salt
      Bake at 425 about an hour. Heaven

    Picked up some Double R Ranch teres major from the grocery store. Rubbed with Henrik’s signature seasoning. Cooked on the performer on the elevated grate over wood coals. Threw some asparagus on there while the meat rested. The fire was so hot, it re ignited some leftover coals on the other side of the SnS 😂. Came out fantastic!

      Beautiful meal. The meat is cooked perfectly, and accompanied by simple pure food: asparagus and potatoes. Add red wine, and I'm in heaven!

    Have house guests tonight - daughter, her husband and the 3 month old. They live in town, but the second COVID shot (Moderna) has them feeling under the weather, so we are helping with the baby. So I spun two 4 pound birds, seasoned with Lawry's Chicken and Poultry Rub, and tossed some corn on the cobb down in the bottom of the kettle as well. I wanted the skin to crisp up a little more, but the breasts were both over 160F, and we were hungry, so I pulled them a little early. The wings and legs were nice and crispy, the rest of the skin not so much. Next time I will run the fire hotter - I ran about 350F on the dome thermometer for this cook. Usually I run the vents wide open for chicken, and here I closed them to about half. Should have stuck with tradition!

    FYI I really like the kettle rotisserie. There is so much space, I just didn't even bother trussing the birds. I did capture the tips of the legs under the tines, but I let the wings flop.

    First, gotta have a little libation while monitoring the last 30 minutes of the cook... and I had to whip out an umbrella as it started raining right after I dropped the birds on.

        Radish on tacos is so under rated.

      I made fish tacos, too. Not as cool plating as Attjack, but still mighty tasty. Did them "blackened style" on cast iron on the Weber. Chipotle Lime Crema and Pico. Not shown, homemade guacamole (as always).

      cut a chicken up into quarters plus wings for fun … hit it with Henrik KC Royale …. After letting it air in the fridge for 24 hours … then cooked on the Hasty-Bake …. Indirect side was running about 325, then over direct for about 5 minutes

      First, this was the horrible view I had, as I smoked a cigar, and cooked the chicken

        With that much, you gotta either be hosting a huge party, or "meal prepping" as my kids like to call it. Pulled pork freezes and reheats well, and can be used so many ways.

        It was for my nephew's 2nd birthday party. Pork shoulder is a great way to feed 40+ people.

        jfmorris My grill is clean because it is fairly new. I have been a long time cooker on low budget models and my wife blessed me to upgrade to a Weber Genesis II S-435. I'm loving the grilling space. We like to entertain, so more grill space the merrier!

        I've got the Genesis II E-410, and love the space over previous gas grills. I gifted it to myself when I found it on clearance for $399 at Home Depot in January 2019. Use yours for a bit longer and it will get a little gunked up!
