      UFC, that dude got rocked so hard he started buffering. Took him a few seconds to remember to fall hahaha

    Tonight, we made reverse seared some NY strips cooked to medium rare. Started with indirect heat on my kettle with some hickory chips for a little extra smoke and then seared using the chimney method. It was one of the better steaks I had outside of a good steakhouse

    First try with the Vortex. Boneless/skinless chicken thighs. Mixed up a marinade I found online. A little pecan for smoke.

        Update: I forgot to take pics of the finished product. In short, yummy. We ate them all. 🤷‍♂️

      My own version of Competition Chicken. SnS with Applewood for smoke. I made a homemade Sweet, Spicy, Vinegary Bbq Sauce. It also had finely minced onions and garlic.

        You gotta room for rent and are meals included

      Tripped over this 3-4 lb piece of brisket yesterday. Dry brined over night in Texas 1836 rub, topped it with my rub outta the fridge on to the grate.
      Cooking on Jealous Devil Lump with pecan chunks.
      BKK holding at 280ish right now so looking good.
      Get this done and have some jerk chicken thighs to go on at 4:00 or so.

        No Panhead John, I will not eat my heart out. Instead I will enjoy a perfectly grilled salmon steak along side some asparagus with a side of garlic-lemon-parmesan linguini. Here are the kids getting their apple wood smoke on....

        We really like dates stuffed with goat cheese and wrapped in bacon. Why not make a pizza with a cracker thin crust, vidalia onion dressing for the sauce then topped with chopped dates, chopped bacon, red onion, and goat cheese. At serving it got a drizzle of balsamic glaze. It turned out pretty good.

        And away we go. A rack of Costco St. Louis ribs (beautifully trimmed and membrane already removed) with MMD on first and then some Brazilian BBQ rub (commercial by Club House) that I really like. Of course it started to rain just when the ribs had to go on. The ribs are under one gazebo on the PBC and I'm under the other. 💦😎👍

          That there is breakfast, lunch, and dinner all represented on one plate. A well-rounded meal for sure!

        These are some products of my third cook (05-13-2021) on my new SNS Deluxe Grill setup. I love the grille and the Slow 'N Sear grilling system is nothing less than amazing. The real effort of this post is to focus your attention on the "Man In The Shoulder" seen on the left side. His face can be seen in the exposed fat and shows a fella with an insidious, haunting grin.
