    I also made a pork sausage fatty this weekend. I made this with sausage, cheese, pepperoni and cubed chuck. All wrapped in a bacon weave, then coated with Blues Hog Raspberry Chipotle Sauce. This was a goooooood meal.

        Not a big fan of grass fed beef personally, but the picanha looks really really good. We really like Picanha we think it’s the best cut of meat on the cow.

      I'm just gonna abandon any pretense of modesty... I nailed this one. Tri tip roast. Perfect medium rare. Perfect sear. On sourdough sandwich loaf. Chased with Bulleitt rye.

      I'm content. Wish they all turned out perfect, but they were practice for this time!

        The rub packs quite a punch, I like heat but I thought I used it sparingly and it's still a bit much Good stuff though, gonna use ot on wings next time.

          Ernest yeah I've been to the islands a few times and have usually had at least 1 Jamaican co-worker at each assignment who was more than happy to try and turn my face red. This stuff isn't habanero hot but definitely more than jalapeno hot, and it lingers. It was about 30 minutes before my mouth wasn't tingling anymore. Can't wait to use it again!

        There was a large hole in my culinary tasting experience. I had a small piece of pork belly in the fridge. And I realized I had never experienced pork belly burnt ends. As we were eating the last few pieces of devine swine, I realized no pics, didn't happen.
