Dinner: Click Akaushi chuck ribs smoked yesterday.
Leftovers: brought the two ribs we didn't eat last night to 135F/57C with the sous vide, then pulled it all apart and made suadero-ish tacos, plus a portion of the leftover black bean charro I made as part of my Bones Memorial Cook. Finally, the dipping sauce was a combo of the juice that was left in the sous vide bag with some cabernet-port reduction made with our Xmas prime rib - sublime.

Since today is Easter I decided to do something special for brunch.
Started with that corned beef flat I smoked recently:
It's the one in the foreground.
So, got my ingredients ready:
Chopped up what wasn't chopped, fried it up in the cast iron skillet using the leftover smoked corned beef juice (saved it from the wrap), and promptly realized there wasn't enough fat to keep things from sticking, but, still managed to make a good looking corned beef and hash brunch:
And yup, it was good. Cleaning the skillet not so much. But, overall it was worth the effort.
