Leftovers: brought the two ribs we didn't eat last night to 135F/57C with the sous vide, then pulled it all apart and made suadero-ish tacos, plus a portion of the leftover black bean charro I made as part of my Bones Memorial Cook. Finally, the dipping sauce was a combo of the juice that was left in the sous vide bag with some cabernet-port reduction made with our Xmas prime rib - sublime.

and tonight, put some tater tots on cast iron and cooked in oven, heated some pulled pork on stove and put on top of cooked tots, shredded some cheddar and Monterey Jack cheeses on top, put back in oven to melt cheese. Done.

I've posted pictures prior. So it's another shoutout to Troutman and his Red Chili. Had the 2nd to last portion this evening. Coming into spring/summer I'll hold off another cook. Come late summer looking at fall, it happening.

Since today is Easter I decided to do something special for brunch.

Started with that corned beef flat I smoked recently:

It's the one in the foreground.
              So, got my ingredients ready:

Chopped up what wasn't chopped, fried it up in the cast iron skillet using the leftover smoked corned beef juice (saved it from the wrap), and promptly realized there wasn't enough fat to keep things from sticking, but, still managed to make a good looking corned beef and hash brunch:

And yup, it was good. Cleaning the skillet not so much. But, overall it was worth the effort.

Lambchops Scottadito and sun dried tomato polenta.

And ate them today with some Tres Leche cake from the weekend.

Pork chop and marbled potatoes. Search the potato on the food network site. I added bacon.
