      The salmon looks great! I have only done salmon that way once. Need to give it a go again.

      Thanks! It was my first attempt and will definitely be doing it again!

    Made my monthly quota of 48 meatballs over the weekend. Saved a bunch to eat before freezing the rest. Made the family meatball sandwiches for lunch with a homemade marinara sauce (San Marzano's, tomato puree, onions, garlic, basil, oregano, S&P, EVOO), some buffalo mozzarella and a giardiniera. Accompanied by a caprese salad. Simple but delicious.

    Well, I haven’t roto’d in a while, mebbee 3 years, 2 of em whilst caring for my wife & the last 9mos it is what it is. So I got one of these no, no, no, cacklebirds from Aldi, an almost real chicken that’s not pumped with chemicals & additives. I had fallen into the trap of buyin em at the stupid market, how could ya pass up $5 bird for dinner when yer pressed fer time or me lately just not givin a rip. Well I shook off the blues & fumbled my way through the machinery & tools & got the job done. If only I can now remember how good an almost real chix or a real chix (next) tastes. It was something marvelous. It’s why we do what we do in this here Pit. My eyes were bigger than my stomach as my mama used to say, I ate half of what you see on the plate.         We forget about BLTs, then rediscover. They’re an amazing combination. The inventor deserves a Nobel prize.

      Weber’s ideal burger, cheese, bacon, onion, bourbon Thai pepper bbq sauce (using Thai peppers we grew) on brioche bun. Classic, simple, and yum.

        4 racks of St. Louis cut ribs, and these 4 loaves of bread. That is for other people’s dinner though, I’m smoking chili cheese dogs for my wife and I.

          A whole different meaning to leave it to the dogs. The good stuff, Wibs, fer the proper folk & chili dogs fer the wee folk. 👍

        At the end of th4 day, it comes down to smoked chili cheese dogs, and being grateful for them.

        Pork shoulder steaks with green pepper relish, salad with apple, basil, cilantro, red onion, and peanuts dressed with a Thai style vinaigrette.

          What are those charcoal baskets? I like them.

        Sockeye salmon on the gasser with a couple cherry chunks. Rubbed with Hank’s KC Royale, which is fantastic on salmon!

          Za'atar Spiced Trout with Beet, Bean & Greens Salad in Hummus Vinaigrette. The vinaigrette was amazing, hummus, white wine vinegar, olive oil, salt, and pepper. So good! All done on the Blackstone.
