    I bought a new phone and can’t figure out how to put text in after posting photos. I am trying to master the seemingly simple cheese skirt on a burger. Getting close.

      smokin fool - the iPhone update killed my iPhone 7. I had replaced d the battery once and life was good. The update made me have the charge twice a day and my battery was relatively healthy. So in the 4 year cycle of tech I bought the newest iPhone. It is a learning curve. After posting pics I couldn’t address text below - or didn’t know how.

      I love the iPhones and iPads. That’s all I’ve had. They’re so easy to use and everything integrates well together with iTunes and other stuff. Let’s hijack this post and turn it into Tech Talk.

    Some scallops the other night for celebration of my 2 years of sobriety!

    These were done with a lemon caper wine sauce. Delish!

      Though decidedly not a fan, advocate, or even a proponent of Sobriety, I will readily admit, freely, that it beats th hammered dogshite outta smackin into trees at high velocity, Brother!

    Some leftover Italian sausage meatballs and pulled one of my sourdough baguettes out of the freezer. Believe it or not, I picked that up and ate it! I was all messed up like a little kid when done! At least I was smart enough to cover my shirt with a garbage bag first. Yummy!

      A garbage bag, even store brand, tucked in neatly, thoroughly, methodically round one's collar, makes fer some worry-free eatins, an with food like dat, I might need to use two!

      A meataball parmesan sub! ooooo how I miss NJ.

    I splurged a little today at the local meat shop No Bull Prime Meats, which I provided a review in a separate post (side note - it was the first butcher/meat supplier review for the state of New Mexico!). I bought 9 different cuts of meat if I remember correctly and tonight I went with a T-Bone, which I have made in the past from this shop. Look at the marbling on this prime cut! It’s comparable to American Wagyu!

    This t-bone was magnificent! Just as good as the first one I cooked on the Weber Kettle a few months ago. The tenderness and flavor was wonderful, I seasoned with a Santa Maria style rub I make that is simple but flavorful. And went with same method, kettle cook up to 120*, rest and then seared over the SNS.

    To go with, I chopped up some Brussels and fingerling potatoes and tossed with EVOO, S/P and onto the kettle they went. Got a nice char on the Brussels and some great crispiness on the potatoes. Sliced up the T-bone and served up on my fancy Le Creuset platter that gets used once a month or so

      Plochmans is some Good Schnit, an I'm picky bout mustards, since they are a staple in my cuisine, I want th bestest lol!!!

      Great Job there, Sister; few things I love me more of than a great Patty Melt, deffo a Personal Fave sammich, along with a Reuben! NOM!

    Cooked a picanha on the PBC. The PBC seemed like an appropriate cooker for this cut. Seasoned with Hank’s signature seasoning. Came out fantastic!

      Red Man . Personally, I'd jus love to dump a few glugsa ketchup on a A5 Wagyu Ribeye at a Snooty-Arsed restaurant, jus to see if'n th Server might have themselves an MCI lol

      But, then, Ive been told that I might be 'jus a tetch too mischievious', at times lol

      Thanks they were for a customer and of course a spare one for the family. I add a little cayenne pepper and chili flakes to the MMD and works great for my taste.

      Followin along, Brotheman!

    For the 5th time in 75 years in Seattle the first 4 days of Dec were dry. Day 5 is dry, too, so I am taking advantage!

    1 turkey breast - Since we were only 4 for thantsgiving I saved a breast from our spatchcocked turkey
    2 racks of ribs - 1 with a moroccan spice rub I got as a present, 1 with Memphis Dust
    German sausages

      smokin fool I had most of the ingredients on hand. There’s a grocery by me that sells bulk spices, so I splurged $3 to get the rest of what I needed.
