Biggest turkey rib I've ever seen.

The best ham I've ever had!!!!! And all I had to do was dunk it in a 140 degrees hot tub time machine for about 6 hours. Costco ham, no glaze, nothing extra. Straight from the store and into the tub. Click image for larger version

Looks so good! I picked up on of the Kirkland spiral sliced hams the other day @ $1.88/lb. I have it in the freezer for Christmas.

I hope everyone had a happy thanksgiving. Here’s the turkey off the komado joe. I may have over done the herbs but came out nice and juicy!

How did it taste - dark doesn't necessarily mean overdone

Yesterday's frankenturkey on the WSM. Turned out GOOD. Dry brined x2 days, then oil and herb rub while the WSM came up to temp. KBB and a couple of chunks of pecan for smoke.

Thanks ofelles, my spatchcocking skills are amatuer at best. Looks crazy, works good haha.

Nothing fancy but this 16lb bird turned out awesome. Cooked in just over 2 hours at 260-280 in the 26” kettle. Just dry brined over night and used some broth, butter and herbs for an injection and a basic rub I made.
i used some spray oil (pam) two different times during the cook and the skin turned out nice and crispy!

I give you No Turkey Leftovers Tonight: Pan-Seared (hey, it's raining outside!) Tuna Steak with Lemon-Oyster Sauce.

Tuna marinated in soy sauce, black pepper, and cayenne. Sauce a mix of EVOO, oyster sauce, and lemon juice. Served over brown rice and carrots.

Panhead John, basic tetrazzini with a few twists: onions, swiss chard, shitake mushrooms, vermouth, cream broth, tomatoes, turkey, noodles.

            That is fantastic.

Sauce is made from porcini powder compound butter, fish sauce, garlic and Aleppo peppers.

I am so on board with that. I've tried the stuffing waffles before, and they are great. I will be trying the mashed potato cakes for sure.

Chicken Parmesan and Italian comfort food cooking is coming on quickly. I ordered 2 cases of San Marzano's today.

I cut a shoulder into cubes and coated with flour and browned. Then added onions, apples and 16 ounces of hard cider and cooked on medium heat for 2 hours. Then added heavy cream and cooked for another 30 minutes. A lot of flavors happening there. Really good
