      Yea I like kalbi. How long did you marinade it for? Last time for me it was a little tough still after grilling.

      Troutman Overnight. Probably 36 hours. I did not overcook either and it goes fast probably less than 5 minutes in total. It came out nice and tender.

      Gochujang is out of this world fantastic. There's hot sauce out of NY made from Gochujang and Sriracha, MAN!!!

    Had some leftover flap meat from Creekstone Farms. That stuff is pure gold. Did a classic reverse sear in this one - if it ain’t broke, don’t fix it

    As I said yesterday, tonight's menu features tacos with some of the leftover smoked chuck roast. It was my second try on homemade tortillas, and this time worked out much better. But, most importantly, I present to you my belated birthday present from my wife: a set of Tricerataco taco holders! It just doesn't get any better than this!

    Pork chops on the grill tonight. Sides were homemade macNcheese and Brussels sprouts. I rubbed the chops with Carne Crosta and was pleasantly surprised with the results.

      Nice and easy.. Looks really good indeed brother

    Smoking a duck tomorrow. Poked the skin and fat, first layer of pepper and a tiny bit of salt, second layer of oakridge secret weapon. Will stuff the cavity tomorrow with orange, ginger, and thyme. Wish me luck. I will update with finished pics.

    Steak and taters! I picked up a beautiful piece of flap meat from Snake River Farms when my grocery store had them on sale a few weeks ago. Seared in a cast iron skillet and served with roasted potatoes. This was a fantastic steak!

    Asado Argentino. 8 LBS beef flank. 2 morcillas (blood sausage) 3 lbs flank en cut beef ribs. perfect 28c weather here today. 12:34 pm and have not cracked a beer yet... better go remedy that.

    Our next door neighbor dropped off some lemon grass and kaffir lime leaves from his garden so we made Tom Kah Gai. Started with a plate of albacore sashimi.

      Thanks, TripleB . We ordered the albacore from Catalina Offshore Products in San Diego. Overnight shipping. Their fish is always top notch.

      I'm gonna second the rec for Catalina Offshore. Fantastic fish, most of it locally caught. No experience with their shipping since they're 7ish miles from my house but, man, beats grocery store fish all hollow.

    Cracked some eggs over leftover brisket, pulled pork, and candied jalapeños. Great brunch for GameDay.
