      I'm doing St. Louis style last meal ribs today, first time for me. I'm a big fan of this site, so I'm sure they'll taste great!

        Anyway, meatloaf for fun and ribs for the picnic. An extra day off never hurts!

              Yeah I think it is. Makes me wonder why we'd want to break it up and start over every week. Maybe IdQ will let us know what he had in mind.

              Anyhoo, so far I have a rack of beef ribs, 3 packs of boneless short ribs, two packs of split breasts, and tomorrow I go back to see if I can get me some butt (pork). Now I just need guests to eat all this food!

                Yep. I think we have the brother in law bringing his family over one night. That'll help quite a bit right there.

                  St Louis Cut spareribs Monday on the PBC

                    Putting two Butts on the WSM 18.5 tonight, two Rotisserie Chickens in the morning on the Webber Silver C Gas and then top it off with some grilled Sausage. Gotta have plenty for watching CFB all day/night!! Any leftovers will be vacuum sealed for next weekend's tailgate. Two birds - one stone!

                      Boston Butt with Mephis Dust and a dry brine, Rack of Ribs on the PBC. It's gonna be good!

                        Pork butt. Pure and simple. Picked one up that came in at a little over 8lbs. The thickest part is about 4in so I don't expect more than about a 7hr cook including a wrap at about 150 or so. I'll maintain a cooking temp of about 225 most of the way.

                          Dos pollos. (Two chickens) since today was technically one of my weekend days. Smoked with peach logs fresh from FruitaWoodChunks.com. Rubbed with Huskee's Rib Rub.

                          18lb Pork Shoulder and 15lb Brisket. Boy am I glad I went with the bigger Kettle. Almost need a damn Ranch Kettle, its gonna be tight!
