    Had smoked up a butt midweek and decided to make pulled pork enchiladas tonight. Pork, pickled red onions, salsa verde, sour cream in the wrap and carne asada sauce and mixed cheese on top with roasted veggies.

    The good bad and ugly. The last 2 fit these. I did these on the PBJ, 14". My 10 " C.I. pan with handles in 17". This does not work on a 14" PBJ. So I went with the 7" with handle it fit. The problem IMO when I layered per the recipe it was too thick, so the potatoes didn't cook to done. The taste was not what I expected. I'm not giving up on this. I need to come up with another cook method.

      I don't see any pictures. I had to cook my scalloped potatoes for 1 1/2 hours (plus the 30 minutes with the cheese on top) for the potatoes in the center to fully cook. I added some chipotle gouda because I was 1 cup short on the cheddar. Turned out really good.

      Sorry the picture didn't show. Yea, clearly not enough cook time. Glad yours turned up top notch. I'll nail next time.

    I....uh...um......I did tacos again. I can quit any time, honest!

    Skirt steak marinated in canola oil, lime juice, and soy sauce for about four hours. Cooked in a hot cast iron pan to about 130 F. Sliced and diced. Topped with pico and colby jack cheese.

      Um…… the rules of the pit is that we are supposed to “keep it clean” as it were. What in the fresh h3ll is that chicken character thing doing to that piece of cheese?

      texastweeter There's no real noticeable chicken flavor. It mostly tastes like cheese and pain.

    Simple breakfast: cheese omelette and Hatch chili biscuits with Hatch chili gravy. First time using the cast iron omelette skillet that was posted awhile back, it is preseasoned and was nonstick but I have to practice my technique. https://www.amazon.com/dp/B00CL8Q9PY...roduct_details

        Looks like the 300 ribeye cook i did about a month and a half ago.

      Grilled up some local oysters last night. Topped with butter, garlic, lemon, tapatio, and some got parmesan.

      Bacon wrapped chili cheese dogs with onion, done on the kettle, smoked with hickory. Bacon takes your ordinary dogs to another level for sure! No beans chili….🥸

        They were lunch a few days later.

      Hard a change in plans for todays cooks as my girls decided they wanted breakfast for dinner. So I had a Sweet Tea brined bird just sitting so I tossed it on the grill sprinkled with hot dirty bird .I was in a hurry and didn’t break the breast down good so the high spots got more heat / smoke then the rest. Its not nearly as dark as the photo makes it look. The taste is outa this world!
      Ill quarter it and put it in fridge for lunch’s this week. Ill do this cook again next weekend as I really want to try the Lanes Sorta White sauce on this when its fresh and crispy!

        How hot is the dust, sounds scary.

      Mrs JCBBQ hates lamb so while she’s away I’m making a lot of it. This here is spicy lamb chops from the Dishoom cookbook. If you like Indian food, I highly recommend it. These chops were off the hook.

        The CJ special (CJ is my youngest boy; turned 7 while I was in NY on business). 33% ground bacon, 67% ground chuck, burger glop, American cheese, iceberg lettuce, red onion, dill pickles, toasted Hawaiian buns, and duck fat tater tots.
