We had some people over today. So that means I go overboard with meat.
4 chuckies and a bunch of beef back wibs! You’ll notice I trim out that hard fat vein and tie the chuckie into a nice round shape
Started out using my two Performers but soon ran out of room. A quick trip to work and I had another 22” of cooking space. Once I started pulling the beef, I didn’t have time for more pictures. Inspired by rmeugene I did a Chuckie today with tomatoes. The flavor profile was like osso buco. Served with risotto and sautéed spinach. Paired with a bonarda Malbec. More about the wine in “what are you drinking” thread…..

I made Sourdough Chocolate Chip Cookies today. There were more, in fact there are more, I didn't eat them all, this just happened to be the one on my plate when I decided to take a picture. Delicious. Unfortunately, both my wife and I forgot Chocolate is not on her approved foods. She had a couple anyway, and ate the cookie around the chocolate chips on some others (not easy to do). The next time I make them I'll make half the batch with chocolate chips and the other without. The cookies were delicious with and without chocolate.

My brain can't get past "sourdough". Is this essentially sourdough bread? It sounds good, I'm just trying to picture the recipe.

Nice because you can use either active starter or discard. I may try increasing the brown sugar and decreasing the granulated. My wife's diet is ok with brown sugar, not granulated, and even in this recipe the granulated is a small portion. My wife has made thousands of Chocolate Chip cookies in her life, and she thinks these are among the best she's had.

I haven't been around that long, relatively, but it's crazy where this channel has gone in 3-4 short years. Between the cooks and cookers and methods and photography all of you are just light years ahead. You all honestly amaze me, granted it seems like most of you are retired and have all day to work on this stuff 😉🤣👍🏻

Sometimes I read this thread and just get depressed. Honestly some of the folks here set the bar so high. Not only good looking food, great knife skills, and really creative presentations, but great photography skills on top of it. Like being a normal human standing next to a super-model. Not fair.

Worked most of the night moving snow from about a mile of sidewalks and came home hungry!
Sorry no cook phots my brain hurts and I didn’t even think of it till I sat down. Anyway here’s my working mans breakfast, Pork chop, fried potatoes-n- onions and scrambled eggs with bell peppers. All done in cast and pretty much everything my doctor tells me will kill me…screw that college boy!!!- No offense meant towards college or anyone that has attended it-

Encore of the Salmon en Croute we made a few weeks ago. flyingpiglet did the puff pastry work and I handled the fish and filling. Good team effort. Served with mashed cauliflower.
