    Getting ready to grind this nice chuckie up to do sliders for "The Big Game" tonight.

    Pan fried in the tallow I sautéed the onions with.

      Used meatheads beer nuts recipe Beefy Beer Nuts, Perfectly Roasted On The Grill (amazingribs.com)​, just shy of 3lbs nuts, so just did 3 times of the measurements. Also used 1 stick of butter, and added a few extra dashes of hot sauce. The butter mixture tasted a hair salty, but the finished product could use just a little bit more salt for me. Also did 200F for and hour and cranked to 275 for 3 minutes at the end to allow for more time in the smoke.

      The cookies are just standard ready to cook dough, MAK still kissed them with good smoke even at 350f.

      One smoked Choriqueso, comin' right up. It's only 3.5 pounds of cheese, I hope it's enough.

        Yup made some myself today. Venison chorizo, white onion, tomato, jalapenos, cilantro, sour cream, velveeta, and 7 pot primo pepper sauce. Yours looks like real cheese, bet its gonna be fantastic!

        My Velveeta to real cheese ratio was off so it was more like a queso fundido con chorizo than the Torchy's style queso dip I was going for, but damn it's good. It definitely needed sturdier chips.

      Double thick pork chop compliments of my Secret Santa MT_Cinnabear . Seared in my carbon steel skillet compliments of last years Secret Santa HawkerXP . Did some potatoes au gratin and added in some pink eye peas from the garden.

        I ran across this post by Jess Pryles on Twitter a few days ago and was intrigued, so I had to try the wings and jalapeno ranch dip today.


        Today also calls for some ribs. The Bronco Pro has been running for the past 5 hrs on half a chimney of B&B plus another half chimney of unlit. For the wings I cranked up the heat to about 350.

            Homemade smoked sausage for the big game. Jalapeño cheddar, linguiça calabresa, and a generic pork/beef sausage. Sausage making is a lot of work, but a lot of fun too. Click image for larger version
