    I have been craving tacos al pastor. So, today I scratched that itch. This batch was smoked on the pellet grill. They turned out great! Served with cotija cheese and a pineapple salsa (that I also made). Delicious!

    Pizza night. Marinara with pepperoni for the mrs. Regular cheese pizza with pepperoni and a post bake drizzle of chili crisp for me. Made with a same day dough 50/50 mix of AP and Caputo 00 flour at 65% hydration

    cooked at 550 degrees with a pizza steel. The marinara didn’t get the color I wanted, and was cooked first, so I turned on the broiler for mine and it got better color and charring with a bake time of about 3 min

      I've liked everything I bought from them so far. The ribeye was my favorite but this top sirloin is pretty good.

    Simple burger done on the gasser tonight. First time grilling a burger in a while. I have been using the flattop for them lately. This hit the spot and they were quite juicy. Family win!

    Haha! And of course the pup looking on waiting for some to drop. 🤣

      I love simple stuff, especially on a week night when I can get one of the younguns to come have fun and cook on the grill.

    Lunch is served. Garlic and herb-roasted pork tenderloin, shallots, fuji apple, and avocado dressed with a balsamic vinaigrette.

    By the way Meathead a good central California Zinfandel goes with this very nicely

      THe only chunky mix-in I did was bell pepper. BUt yeah, I do believe this is probably the best meatloaf I have yet made.

      Can you share how you spiced it, what type of ground beef (93/7, 85/15), etc. Also, I don't see any oatmeal/breadcrumbs in that baby, am I right?

      Would LOVE to pop a meatloaf on the smoker soon, thanks!

      bunky2021 I followed the recipe on the free side (ie amazingribs.com) except that I did not add in onion or sun-dried tomatoes.

      Months of experiments produced a superb grilled meatloaf recipe, a meatloaf that may be just as good cold on a sandwich as hot from the grill. Meatloaf is perhaps the ultimate comfort food, but can often miss the mark when it comes to flavor, texture, moisture, and/or crust. This recipe hits every mark exactly.

    17+ pounder and a 13+ pounder (both before trimming). Hope for at least 12 pounds of meat at the finish line. I LOVE tub liners, they clean so easy while getting tossed into the trash.

      I took a blind attempt at my first run on focaccia. No recipes, just put it together in my head, this is likely 93 percent hydration, which was also my first time playing that high, excited to try 100 percent next. Also baked a few loaves.
