picked up a sixer of Guinny. Found a specialty triple pack of Basil Hayden, Knob Creek n Jimmy Beam black extra aged. Smaller than the 750’s but not airplane btls. Locked n loaded!

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I guess its time to do a freezer dive and select between baby backs and spares, and get them thawing for Saturday...
All I have are multipacks, and its just the wife and me here, unless she gets some of the kids to drop by. I'll man up and eat ribs for a couple of days in honor of Bonesy if I have to though!
EDIT:
Turns out I had two packs of Sam's Club spares in the deep freeze, each appeared to contain two full slabs of spare ribs, so one went to the garage fridge to a defrost. On Friday I'll butcher them down to St. Louis cut, and on Saturday the spares and the rib tips go on the smoker. Still planning to do it on the Performer just to give the kettle some action in honor of Bonesy, and I'll put the rib tips on an elevated rack, for an early cook's treat.Last edited by jfmorris; March 15, 2022, 02:01 PM.

klflowers Thanks for asking. Yvonne is doing absolutely great. Discharged by the orthopedic surgeon, walking great with no cane even. A far cry from where she spent half of last year. Between cancer, the busted femur and 5 surguries in 18 months, it was a hard go of it from Memorial Day 2020 to around January or so of this year, but God and good doctors got her through it.Last edited by jfmorris; March 15, 2022, 04:27 PM.

Spinaker if you do that, it may be best to lock this one with a link in first and last post? But I also don't see a reason not to just post cooks up here. 10 years from now either options leads to people finding the correct posts I guess...

Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.
Ribs in fridge. Took out wings too, they have bones in em? Do on Kettle with Vortex. My backup for Saturday since the ribs will be done Friday. Thanks Mother Nature.

I am definitely in. The 19th will be my 50th BD. We had planned a family/friends cookout, just something small. Serving SL ribs, rib tips, chix quarters, pulled pork and various fixing. I am "assisting" with the cooking as my wife and boys are taking charge
I have dedicated a liter of Buffalo Trace for the day (among other spirits) and will honor Mr. Bones at each toast of the day. Of course, a splash will find it's way into the baked beans in his honor too!
I as well didn't know Bones personally but did enjoy his companionship here in the Pit, as I enjoy all of your company.

I'm on trial this week and living out of a suitcase in Tarrytown, NY. No time to thaw wibs from the freezer. Also, I've been volunteered to cook corned beef for belated Paddy's day on Saturday. I might be able to do a rack of bones on Sunday, though.
