I'll have to do mine early by a week or so - we'll be doing the college tour in south Texas that week and weekend. On the 19th I'll actually be driving back from Houston, we'll stay in... I think Sherman, TX that night? Something like that.
Maybe we can find a good BBQ place in Dallas around the south, east or north side to stop for some 'bones.
truth be told I'm "cheating" as well, cooking 4 briskets,4 shoulders, and The Bones next Sunday starting around 3:00 a.m. (no auto cook here)
Will post later!
I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

Great idea! A special salute to Bonesy I am sure he would (will) appreciate. Baby backs in the freezer I have been looking forward to cooking! All In! Here is to you my friend!
If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I'll either dig some ribs out of the deep freeze or buy a fresh rack out of the freezer to smoke on the 19th in honor of Bonesy.
I think rather than smoking on the kamado, offset or another cooker, I'll need to do this cook on my Weber Performer, to honor the Weber kettles that Mr. Bones loved so much. I encourage anyone else participating to smoke on a Weber kettle as well if you have one.
St. Louis spares are in the freezer, waiting to join the memorial on the 19th. Don't have a weber kettle anymore, but do have a SnS kettle on its way. Might be here in time.

I have a Hasty Bake that I won right here on Amazing Ribs ! Also have a pellet grill but the HB is the best for daytime BBQ. Like my Thermoworks chef alarm and heat resistant gloves.
What a great idea, thanks for suggesting it Spin !! I ordered some beef chuck ribs from Creekstone (currently on sale). Will save them for the cook on the 19th !! Looking forward to it !!
Those are some pretty ribs. I took the bait and ordered some from Akaushi but they look about half as thick as those. Oh well, Bonesy wouldn't have minded one way or another.
